GA Peach Pound Cake

Wonderful! I did a practice cake using canned peaches, which another review suggested - thank you! I made this again a couple of days later using fresh apples for a co-worker's birthday. The cake was moist and the apples were tender and it went great with coffee and tea. I can't wait for fresh peaches to come into season here!

Cheryl's Spinach Cheesy Pasta Casserole

I really enjoyed making and eating this! I customized it a little, though. I sauteed fresh spinach in olive oil and garlic while the pasta was cooking. I used another reviewer's suggestion of italian bread crumbs and another reviewer's suggestion of skim milk. And I agree that it is really filling.

French Green Beans

Not bad. I made this for my family. I normally don't like green beans, but I liked this recipe. Another reviewer was right, though, the almonds really make the dish. I used natural slivered almonds from the bulk food section to reduce sodium.

Chicken Oreganato

This was great! Very easy to make. I used boneless, skinless chicken because we're all watching our weight. The lemon really perked it up. Came out really tender. Even my picky pre-teen brother liked it. Great with any side dish (I served low-sodium stuffing and green beans).

Pizza Pinwheels

Christi is right - the crescent roll dough is mouthwatering. These are great as snacks, appetizers and even quick lunches or dinners. Very easy too - my boyfriend makes them all the time now.

Angel Hair Pasta Chicken

My boyfriend and I tweak this a little. For instance, we saute the chicken with minced garlic, add oregano to the chicken stock, use ziti instead of angel hair b/c the sauce doesn't coat the angel hair very well. We also use a bag of frozen broccoli, carrots, and cauliflower for variety. Otherwise, this is really easy and has become a standard "fall back" dinner.

Eggplant and Zucchini Casserole

Didn't have much luck with this. I think I know my mistakes, though. I used canola oil to cook the veggies in. Next time will use butter to bring out the thyme and natural veggie flavors. Also I used herb stuffing. It confused the veggie seasoning. Next time will use plain bread stuffing. I also like another reviewer's suggestion of using monterey witht the colby cheese.

Delicious Black Bean Burritos

Great! Very easy to make and very tasty. I used one onion, chopped, one red bell pepper, chopped, one green bell pepper, chopped, and one jalepeno pepper, chopped. I also substituted a couple handfuls of colby jack cheese for the cream cheese. Topped with salsa, yum! I was also thinking of trying this with the jalepeno cream cheese from Brueggers (although it is kind of expensive).
