Sweet Onion Pie

My husband says this tastes like gourmet food. I used a refrigerated pie crust because it was easiest, and used skim milk because it's all I had. I did add some cooked, crumbled bacon, too, since I had it handy, but I'll serve this to my vegetarian daughter without the bacon. Inexpensive, easy and delicious.

Strawberry-Rhubarb Jam

This is a keeper. The jam set quickly - no anxiety about whether it would be too runny. I made a batch of rhubarb buttermilk muffins and put some of this jam on it - a match made in heaven!

Spinach Quiche

I followed this recipe exactly and it came out perfect. I baked it a bit longer than directed because I have a slow oven. I bought a good quality cheddar cheese and grated it myself - I think it really added to the quiche.

The Best Zucchini Dip Ever

I thought this dip was very, very sweet and didn't like it at all. I added about 1/4 cup lemon juice to tone down the sweetness. I might try it again and use 1 cup of sour cream and once cup of salad dressing just because I am desperate to use up zucchini!

Homemade Dog Biscuits

I made these for my dog after buying a store brand of biscuits that produced "unfortunate" (phew!)side effects. She loves them, they agree with her better than the boughten biscuits and they are easy to make. I followed the advice of other reviewers and left out the salt and substitute water for tomato juice. I use my KitchenAid with the heavy-duty mixer attachment and have no problem. I especially like this recipe because it uses the same ingredients I use for making bread for the family.

Foolproof Chocolate Fudge

My daughter called me at the beginning of her two-hour drive home to ask if I had any chocolate in the house. I had seen this recipe and bought the ingredients, so I told her no, but I could make fudge. Two hours later, when she pulled into the driveway, the fudge was ready. My husband says it's the best fudge I've ever made. They both think I'm amazing. All the credit goes to this very simple, reliable recipe. Thanks for making me look good.

Apple Butter I

This is awesome apple butter. I followed the advice of some commenters. I decreased the sugar by one cup, the cinnamon by one teaspoon, added a couple of apples because the ones I was using were on the small side, and added balsamic vinegar. My husband said it was as good as we bought at Shipshewana. I think it is better. I love using the slow cooker - it's so easy.

Fresh Pear Bread

I took other people's advice when making this recipe. I diced the pears into small pieces instead of shredding them, and then drained the liquid off and patted them as dry as I could. I doubled the recipe and used four cups of very firmly packed diced pears, then took one scant cup out and processed it in the food processor. I used changed the recipe a bit when I doubled it: 3 whole eggs, one package of pudding mix, 1 cup whole wheat flour and 2 cups of white flour and only 1 1/2 tsp of cinnamon. Baked at 350 for one hour and the bread came out perfect. Five stars. I find that fruits and vegetables vary so much in size and water content, so results can really vary.

Unsloppy Joes

I made this recipe twice. The second time I substituted 1/2 of a package of chili seasoning for the chili powder (waaaay too much chili powder for our taste), used a tablespoon of catsup instead of opening a can of tomato paste and using only one tablespoon, and served it in homemade bread bowls. It's a great, filling vegetarian meal on a cold winter night.

This was a huge hit in our house. My son has just turned vegetarian and was glad to find this recipe. It seems as if it would be very basic, but it's quite tasty and very easy. Highly recommended.

Deluxe Waffles

These waffles came out perfect. For the uninitiated, like me, I found that cooking them on high, if your wafflemaker has temperature settings, for four minutes, works just fine. I sprayed the waffle maker with vegetable spray between each batch, because I have a history of having waffles stick and making a big mess.

Rum or Bourbon Balls

I made these for Christmas this year. They were very popular at my holiday party and I was asked for the recipe. I see the logic of dissolving the sugar in the rum after making them - I'll do that next time. They really do get better as the 7th day approaches. Excellent recipe; thanks.

Garden Pasta Salad

This was a huge hit at our house. I used whole wheat pasta, which had a different, less "slippery" texture than regular - we all like it better. I followed another suggestion and used Paul Newman's Balsamic Vinaigrette dressing. I made the salad ahead of time and added a bit more dressing just before serving to get the right consistency for the salad.
