Irish Chicken and Dumplings

Reviewed: Mar. 23, 2012
This was pretty good. My husband and I really liked the flavors of the soup itself and the dumplings were very delicious (actually, I didn't use the dumpling recipe given, instead, I used croissant rolls broken into pieces) However, we were highly disappointed that not all the potatoes were cooked all the way through, even though I cooked the soup for about three hours all total. I followed the directions and simmered it on a low setting the entire time, which I probably wont do again. Next time, I'll probably increase the heat to medium and add just a few more seasonings because it turned out to be slightly bland. But we did like this recipe enough to definitely try it again so, three stars. (3-22-12)

Ground Beef Stew

Reviewed: Mar. 23, 2012
This was pretty good and it went over pretty well (besides the carrots ;) ) with my kids too. I might add a little more tomato flavor to it next time, but all in all it was a good, QUICK recipe (in my household, quick as almost always better) and I will be making this one for my family again.

Cranberry Brisket

Reviewed: Mar. 23, 2012
This was simply fabulous! When I first saw this recipe, I was really skeptical at first because of the combination of ingredients together and I was worried that it would turn out too sweet as my husband and I don't really like sweeter dishes. However, as a newer cook, I've been trying to broaden our horizons (and palettes) and seeing as how the recipe contained all things we like on a normal basis, I decided to take a leap of faith. (The four and a half stars might have contributed to the equation as well ;) ) WOW!!! Like I said before, flipping amazing. I changed absolutely nothing on this recipe, with exception to using frozen cranberries and not fresh because my local grocers didn't carry them. It's hard to imagine that the frozen cranberries made a single bit of difference in the over all flavor of the roast, it was really just that good. The flavors blended perfectly and it was not a sweet roast at all. It was so tender that fell apart with a fork; we didn't even need steak knives. All around, beyond and above, excellent recipe and I am soo glad that I decided to take a chance on it. I will most certainly be making this again!!

Chicken Breasts in Caper Cream Sauce

Reviewed: Mar. 26, 2012
This was pretty tasty. The blend between the butter, dill and capers, was simply fantastic! It blended very well with the flavors of the chicken and complemented it almost flawlessly. I only wish that I had made more of the sauce, it was soo delicious! I was a little disappointed in the toughness of my chicken (completely my fault) as I had to reheat it since it hadn't cooked completely through the center. It took away some of the tender juiciness of the meat, which would have made this dish even better. Besides my personal kitchen blunder, this was a very good recipe, so good in fact, that my two boys (5&6) gobbled it right up then asked me for seconds :)

Mediterranean Pasta

Reviewed: Mar. 26, 2012
This was just okay to me. I'll say right away that I actually left out the chicken in this recipe since I was already having a chicken dish with this. Next time, I'll be sure to add some because I don't think it turned out the same without it. The bacon didn't really mix well with the feta, olives and rosemary by itself and would have probably been a lot better if I had put chicken in the mix. (I ended up giving my bacon to my oldest son) The only changes I made was to add some garlic powder to enhance the sauce's other flavors, and left out the artichoke hearts. My boys loved this though, and asked me for seconds, which is rare unless they really like something, so kudos to the recipe. I'll make this again, but like I said, next time, I'll definitely add the chicken.

Egyptian Koshari

Reviewed: Mar. 26, 2012
I was really excited when I first found this recipe because I love the Egyptian culture and was ecstatic that I would be able to sample some of the authentic cuisine from Egypt. So I was extremely disappointed when this recipe flopped completely at my house. It was just way too starchy and way too bland. In fact, I've never eaten something this bland before. No amount of extra tomatoes, garlic, onions or salt seemed to make it any more flavorful, it just made it overly salty. I feel bad about the poor review, but I will not be making this again. :(

Smothered Tilapia

Reviewed: Apr. 3, 2012
This was pretty good. My husband and I were getting tired of Chicken and decided that we hadn't had Talapia in forever so I set to work on finding a recipe that sounded unique. This definately took the cake. When I first looked at the ingrediants, I was surprised to see so many variants in flavoring and it intrigued me. It turned out very nicely. I didn't change anything to the recipe and baked it for about 25 minutes. It was moist and flakey with bold flavors that blended very well and I've got to say, the tomato really makes this dish. My husband raved about it and instructed that I add this to my list of keepers. Thanks for the good eats. ;)

Cherry Pie

Reviewed: Apr. 10, 2012
This was pretty good! It was also my first successful pie, yay me! My husband is an avid lover of cherries, but alas, unless they are cooked, he's very alergic to them. So, when I found this recipe, he insisted that I make it. I just gave him a skeptical look given my unfortunate lack of success in making any kind of dessert, no matter how easy it is. (when I say lack of success, I mean unedible) Still, I wanted to give it a shot all the same. I was VERY surprised (and utterly delighted) when it turned out, not only tasty, but presentable as well. Talk about a boost to cooking self-esteam. Thanks for the great recipe!! :D

Pasta Pomodoro

Reviewed: Apr. 11, 2012
Not Bad, not bad at all. I discovered I didn't have angel hair so I used macaroni noodles instead. It turned out pretty well though. In addition to the parm, I also added some shredded motz which gave it a little more of a cheesy texture, and I absolutely loved the blend of the balsamic and tomatoes so I added a dash more vinegar. Delicious! Even If my kids didn't really care for this, both my husband and myself enjoyed it tremendously. The only thing I think I'll change, is next time, I'll take DEBNJAMES' advice and add some chicken to the mix, yum! :)

Watergate Cake III

Reviewed: Apr. 11, 2012
I was happy that this turned out pretty well. (for me that's saying something since I can't seem to cook dessert to save my life, including boxed) I followed the recipe to a tee, adding the coconut into the mix since my family all LOVE the stuff..(num) The only ingrediant I didn't have was the veggie oil which I subbed for canola. It left a slight after taste that wasn't entirely pleasent in the uncooked batter and I was pretty worried. Fortunately, in the finished product, the aftertaste was barely noticable. For the topping I added two drops of green food coloring just to give it that added springy look to it and sprinkled more coconut across the top. For the most part, I was really pleased with the results. The reason I'm giving it three stars, is because for some reason the cake solidified fine in the oven with the exception to one of the sides, which bubbled over the rim. I have NO idea why it did this, it could just be my oven, however, I had too work around the mess it created and also cook the cake 10 minutes longer then the recipe called for because it was no where near done at that point. So, the end result was that a small portion of the cake was harder along the rim while the rest of it turned out great. But that's okay, I'm just glad it's edible at all. :) Anyway, it's very sweet and my husband likes this very much so thank you for the recipe.

Cheesy Ham and Hash Brown Casserole

Reviewed: Apr. 12, 2012
This was simply delicious! And it was soo quick. Quick, easy and hearty is a very good thing around my house. This is the second time I've made this and it went over just as well as the first time which is very hard to achieve with my kids. Typically, at least one of them doesn't like whatever recipe I'm making that night. But with this, it's a win win ALL the way around. I just know this is going to turn into a family favorite! :D

Parmesan Chicken

Reviewed: May 1, 2012
This was very good!! (and according to my husband, very VERY good. In fact after he finished his first helping he begged me to make another batch) I didn't have any bread crumbs so I used flour and seasoned it with creole, italian seasoning, garlic powder, and a pinch of cayenne. Otherwise, I followed the recipe exactly and it turned out delicious!! Thanks for the wonderful recipe! :)

Tex-Mex Green Bean Salad

Reviewed: May 1, 2012
This was really yummy. I loved the contrast of the lemon juice, olive oil and cumin together. They blended very well together. Though my two boys (5 & 6) didn't care for this, my 2 year old daughter loved it, and my husband, who is pretty picky when it comes to how he'll eat greenbeans, liked this too. Thanks for the unique twist on a classic family veggie!

Beer Batter Fish Fillets

Tomato Cakes

Reviewed: May 9, 2012
The flavor was okay. It could definately using some spicing up. My kids didn't like this at all, though I was rather proud that my 5 year old choked it down. My 2 year old daughter snubbed them immediately and my 6 year old took one bit and made a rather unpleasent face. (He doesn't like tomatoes anyway) I myself, thought that the consistancy of the mixture was blah...It turned out mushy not crispy and I had my pan super heated. I might be able to get past the somewhat bland taste by adding some of the ingrediants other reviews have added, but I couldn't handle the texture at all. I ended up throwing the rest of the batch out. I may or may not try this again, but if I do, I think I will definately add other ingrediants and an egg; maybe that will help.

Chicken Paprikash II

Reviewed: May 10, 2012
This was fantastic! I'd never had anything Hungarian before though I have heard through a Hungarian friend of mine that there are many dishes that are delicious and unique. Chicken Papkrikash was one of the dishes she'd mentioned. So when I came across this recipe, I was utterly delighted. It was every bit as good as she had stated. I loved the thick tomato, sour cream and paprika flavor. So rich and creamy! And I absolutely loved the zing that the red pepper gave it. Soo good! I followed some of the directions the other reviewers gave and added chicken broth instead of water which I think gave it extra flavor then it would have had I used just water. I also poured it over egg noodles. Yummy!! :) The only reason I'm giving this just four stars and not five is because my five year old thought it was a bit too spicy, (he doesn't even like pepper though) and my 2 year old took one bit and instantly stuck up her nose at it saying 'I no like it mommy...' (Sigh...she's soo picky -_-') Oh well, there loss hehe ;). Too bad for them, I'm definately adding this recipe to my list of keepers! Thanks so much!

Coconut Lime Rice

Reviewed: May 11, 2012
My husband and I couldn't decide if we liked this or not at first. The flavor was very mild and the coconut over powered and hid the lime flavoring almost comletely. After two helpings, we finally decided that the taste was not for us, which is sad because with both love both lime and coconut, apparently just not like this. :(

All of this thought that this was pretty tasty. The only one who didn't really care for itwas my two year old daughter and it's not very easy to please her anyway. I didnt' have bread crumbs, so I used flour instead. I doubt that it made much difference. Thanks for the yummy recipe :).
