Karyn's Cream of Crab Soup

OMG!!!!!! This is, by far, the best soup I have ever had! Better than any restaurant even. I did use less Old Bay (1 1/2 tblsp) because of the kids, but that was plenty for us. I will be making this again and again! Already on the menu for Christmas eve. YUMMO!!!

Angela's Awesome Enchiladas

These were excellent!! Everyone loved them including my picky 2 year old! The only thing I did different was that I added cumin and garlic powder to the water when boiling the chicken. This will be my only enchilada recipe from now on!! I can't wait to have the leftovers for lunch!!!

Asiago Sun-Dried Tomato Pasta

This is my absolute favorite meal EVER!!! I would give it 10 stars if I could. I did make a few changes though. First, you must add more cheese, I use about a cup. Second, I use chicken tenders and marinate them in Italian dressing (at least) overnight. Finally, I skip the green onion. I love green onion, but found them to be quite overpowering in this dish. I have made this numerous times and have even taken it to a pot luck dinner. I left with an empty dish and everyone left with the recipe! Thanks for posting!

Chicken with Asparagus and Roasted Red Peppers

YUM!! I think this may be my new favorite meal! Definitely restaurant quality!! I did make a few changes though…I dipped 1 pound of thin cut chicken breasts in flour which I seasoned with seasoned salt and fresh pepper. I had to cook my chicken in 2 batches (there was not enough room in my pan) so I used about 2 cups of chicken broth total…the flour seemed to soak up the broth so as I turned the chicken I added more. When the chicken was done I removed it from the pan and added the garlic (3 cloves) and veggies. I let them cook for about 3 minutes and then placed the chicken breasts on top of the veggies, covered and let simmer until the asparagus was tender, topped with tomatoes, balsamic vinegar and lots of mozzarella cheese and covered until the cheese was melted. I can’t wait to eat the leftovers today for lunch!

Garlic Bread Fantastique

Wow!! I was kind of leery of the mayo, but don’t let it scare you away! This was so much better than I expected! I used a seeded Italian loaf, cut the oregano down to 1/4 tsp (not a big fan of oregano) and added some dried basil. I ended up eating 3 pieces with dinner. This recipe could be trouble for me…bread is a huge downfall of mine!

House Fried Rice

This was so good! I made this as a side dish with sesame chicken so the only meat I added was some deli ham. The only other change I made was to add an extra egg. Totally satisfied my (pregnancy) Chinese food craving and my 18 month old loved this! This will be going into my regular recipe rotation. Thanks!

Jay's Signature Pizza Crust

Yum!! Made this crust for a buffalo chicken pizza (recipe also found on this site) and it came out perfect. I used a medium size cookie sheet in order to have a thicker crust. I usually throw out the crust from pizza, but not this… I ate every bite!!

Buffalo Style Chicken Pizza

Made this Friday night and all who ate it agreed that it was the best pizza they ever had! However, I did make a few changes: I made the crust from a recipe that I found on this site (Jay’s signature pizza crust) and brushed the crust with olive oil and minced garlic and baked for 10 minutes prior to topping. I cooked the chicken in Griffin’s Hot Buffalo Wing Sauce which is by far the best wing sauce I have ever had. I did not use a whole bottle of dressing just spooned all over the pizza on top of the cheese and chicken…it came out amazing!!
