My husband and I love this recipe! I made a few variations to save time and calories. Instead of using ground beef, I used a can of refried beans (no stovetop cooking involved!). Mixed them in a large bowl with the salsa (only had 1 C on hand) and black beans (instead of the chili beans). Then poured that over some leftover corn tortillas, then topped the bean mixture with some frozen corn, can of drained diced tomatoes, sliced olives, green onions, and shredded cheddar cheese. I'm not sure I'll use the corn tortillas again. They were easy but were a little difficult to cut through. I made this ahead of time, stuck it in the fridge, and baked an extra 10-15 minutes. Will definitely make this again and again! My 6 yr old loves to help me with this one!
