Did exactly as the recipe called for... made two good size balls. I'd cut down on the cheese next time as it did appear to be a bit much. Excellent and delicious!

Slow-Cooker Corned Beef and Cabbage

Awesome flavor! Did exactly as the recipe said but I only cooked it on high for an hour in the crock pot before turning it down and cooking all day. This is a perfect meal for an autumn day!

My husband LOVED this recipe! Yes... It's not near the top of the eat healthy food chain but if you watch the serving size, it's fine! I always make recipes exactly as written the first time. You can always tweak it to your taste the next time you make it. So many possible combinations with this meal! Add lettuce and tomatoes, black olives, refried beans, serve with extra sour cream, salsa... go crazy and enjoy! I believe kids would enjoy this too!

Beef Tenderloin With Roasted Shallots

Oh my! Absolutely a winner! I went by the recipe exactly except for cooking it longer as my chunk of tenderloin was closer to four pounds. I believe I can change my expertise to Gourmet Chef with this recipe! I've never cooked with shallots before... sweet and was perfect in this gravy topping! DO try it as the recipe says first... then alter the recipe to suit yourself!

Crab Stuffed Flounder

This was delicious! Depending on the size of your flounder... adjust the melted butter. My flouder werenot that big and I got a lot of smoking from my oven from the excess. Still a fabulous recipe!

To Die For Blueberry Muffins

I made 12 smaller muffins... gave some to my parents when they stopped by and got a call from dad RAVING about them! To me... they were good but messy! My thinking is I need to cut back on the topping for the smaller ones.

Coconut Oatmeal Cookies I

I've never understood people altering the recipe as it's written the first time they try it. I made this recipe as written and it's fabulous! A caterer that I've used at work had this cookie on a platter of assorted cookies... he called them Cowboy Cookies. This recipe IS that cookie! Took some to a neighbor as a thank you gift and they loved them too!

Chicken Pot Pie IX

I make the individual ones and freeze them! Perfect for us Empty Nesters! Just take two out to start defrosting the day before and put in fridge. Bake as directed. And I've made this exactly as the recipe is written. LOVE IT!!! Tweaking to add other ingredients works well too! If adding potatoe be aware it does absorb some juice!

Best Carrot Cake Ever

I made this for my bosses 60th birthday and it was an absolute hit! I did what was suggested from others... more pineapple juice than water. I didn't have the 10" pans so I used three 8" instead. The only problem with this is the cake was so tall I couldn't fit the cake cover over the cake! This recipe is a keeper!

Baked Kale Chips

Based on other reviews I lowered the temperature of the oven to 325*, shook the dry kale in a gallon zip lock bag (with air inside) with the oil and light seasoned salt and cooked it without the parchment paper for 6 minutes, shook rhe pan and rotated it in the oven for another 6 minutes. It was good... adding a sprinkle of Parmesan and Romano Cheese made it really tasty for us! Something different and much better for you then other munchies!
