Cindy's Coleslaw

This Coleslaw was wonderful - my guests went back for seconds! When I put the dressing on, it did not appear to be enough but am glad I did not add more because after it sat in the fridge for an hour or so, there was alot of "juice". Since it was for a party, I mixed it again and put it into a colander to drain and then served. It was creamy and excellent. I served with Zesty Slow Cooker BBQ chicken.

Pumpkin Bars I

Since I always make a mess of cutting bars, I tried this recipe in small cupcakes - they came out wonderful! The recipe will make about 50 cupcakes. I topped them with the cream cheese frosting and caramel flavored candy corn. I used 1/2 cup oil and 1/2 cup applesauce. I tried with whole wheat pastry flour and they were just as good as with white flour. Also cut the sugar down to 1 1/2 cups.

Zesty Slow Cooker Chicken Barbecue

I used Kansas City BBQ sauce and creamy Italian Dressing. It turned out wonderful. I cut all the fat off the chicken breasts and the chicken was easy to shred after it cooked. I served directly from the crock pot, along with Cindy's Coleslaw. Excellent!

Chicken Tortilla Soup V

This recipe is wonderful! Rather than cook chicken as indicated, I boiled the chicken breasts and then shredded them as I prefer shredded meat to cubed in soups. I used the broth from the chicken cooking water and added "no sodium" bullion cubes. I cooked the garlic in the olive oil, then added the onion and the shredded chicken till warm, then stirred in the cumin. For the salsa, I used half mild salsa and half medium salsa. I did add black beans as well which gives the soup a little more substance. This is a keeper in our house!

Spicy Tuna Sandwich

I made this recipe and served as an appetizer along with other higher calorie food. Use a large cracker, next a thin slice of cucumber, then the tuna salad and top with a couple of capers. Tasty, low calorie and high protein. Yum!!
