Banana Pancakes I

These came out great! Not overly sweet and I even added vanilla and a little bit of honey to enhance the flavor. I only had 1 1/2 medium sized bananas but still worked out great. I cooked the pancakes on a lower temp and cooked a little longer than usual so that they would cook completely through (as one person said they were mushy), then I used a teaspoon of vegetable oil and then a tablespoon of coconut oil instead as I have been on a coconut oil kick lately. I ended up with about 10 perfect pancakes that hopefully the kids will enjoy as much as I did. I also made peanut butter syrup which is easy to make just add a tablespoon or so of Jiff All Natural peanut butter to a cup of maple syrup, heat it up until peanut butter is melted then stir well. Next time I might even add mini chocolate chips! :)

Best Brownies

This recipe was a hit with the family! I followed the brownie recipe exactly but for the frosting I had to change it up because I didn't have confectioners sugar. Instead I used regular granulated sugar, I forget exactly how much maybe a cup (?), added it to melted butter then added a little bit of milk, added only 2 tbsp of cocoa and let it boil for two minutes exactly. I then took it off of the burner, added vanilla, let it cool for 5-10 min then it was a hot fudge sauce. I slowly poured it onto the warm pan of brownies and let it cool a bit for 5 minutes before serving. It was perfect!

EAGLE BRAND® Peanut Butter Fudge

I had tried at least four other fudge recipes that either did not set up right or way too sweet and was about to give up until somebody told me about this recipe. It is SO delish! I used more peanut butter than the recipe called for like 3/4- 1 cup. It is NOT overly sweet like the last recipe that I tried. I cannot even taste the white chocolate and it so much easier (and less messy) than using a recipe with powdered sugar plus I used a microwave-safe bowl and just microwaved the white choc chips, sweetened condensed milk and PB, then even stirred in an extra teaspoon of PB after taking it out of the microwave. Husband loves this recipe and I am giving these out to friends and family who are sure to enjoy during the holidays!

Emergency Garlic Bread

I've done this for many years, in fact when I was a kid the school cafeteria served their garlic bread like this with their spaghetti lunch. I add cheeses, garlic, even parsley occasionally to be fancy lol. The kids & hubby love it lol

Easiest Peanut Butter Fudge

I wish I'd read the reviews and suggestions before making this because it was too sweet. Next time I will definitely try the cup of peanut butter, and less powdered sugar. Maybe the texture won't be as dry either, BUT at least in this recipe (my third attempt) the fudge actually set up so it's still a keeper, just needs some tweaking. The other two recipes I'd tried previously were too mushy or gooey but this at least worked somewhat.

MMMMM... Brownies

I used Ghiradelli chocolate chips for this recipe. Husband did not think that I could make from scratch brownies as good as a boxed mix but he was wrong! These tasted so amazing and he said that they were BETTER than boxed brownies and, in fact the best he's ever had. That really says a lot considering that he is from the South where his mama made everything from scratch, including brownies. So...I'm making them again, for the second time in a week...lol

Perfect Pumpkin Pie

This recipe is so easy and delicious. The only different things I do are to use pumpkin pie spice instead and graham cracker crust. Making the pies today and I'm sure they'll be a hit as usual!

Pumpkin Pie Bread

This was a very easy recipe, I love pumpkin bread and it was easy using just the pumpkin pie spice instead of having to buy three different types of spices although I already had cinnamon. I did add vanilla and a little extra pumpkin and cinnamon because I had bought the bigger can of pumpkin. I didn't use as much water since I used extra pumpkin and it was still moist. I think next time I am going to try applesauce in place of the oil and raisins as well. This recipe will definitely be used again soon!
