Allison's Pasta Salad

I made this for a baby shower I gave, everyone loved it, and a couple women asked for the recipe. I doubled everything in the recipe, except for the pasta, which I nearl quadrupled, and every last bit was gone. Grapes were out of season, so I added celery, I also used lemon juice instead of vinegar. I thought the dressing had a bit too much "wang" so I added some garlic powder. I refrigerated it for about 5 hours and it turned out great, and there was no need to mix it with more dressing.

Creamy Deviled Eggs

I have to say I was rather dissapointed with this recipe. To me the eggs had very little flavor and were quite plain. They definitely need to be dressed up with some spices or something. For now I'll be sticking with my usual recipe for deviled eggs.

Pork Chops with Blue Cheese Gravy

This recipe was good, and since I love blue cheese I really liked the sauce. The only thing I didn't like was that the sauce didn't really thicken. I used heavy cream instead of whipping cream. I don't know if that's what made the difference.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

The blue cheese taste is quite strong, but I love blue cheese so it's fine for me. I may try a different type of cheese such as feta, as well as add in more bacon and chives. If the chops are very thick, you may want to pound them out a bit to even the cooking time. All-in-all I quite liked this recipe.

Cream Cheese Chicken

The cream cheese/mushroom combo was good, but all that brown sugar made it far too sweet. And perhaps a hot mustard would work better than a Dijon.

Easy Lasagna III

This was definitely a quick and easy dish to make. Lasagna is usually so effort intense! I took the advice of others and added onion and garlic to the browning beef. I also added to the beef salt, pepper, Italian seasoning, and basil. I added the same seasonings to the cottage cheese mixture (accidentally mixed the tomatoes into the cheese mixtures as well, but it turned out just fine - and very easy!) I also added shredded cheese to the very top during the last 10 minutes of baking. Despite all that it was still kinda bland. It was good and satisfying, but the flavor just wasn't there.

Beth's Spicy Oatmeal Raisin Cookies

These cookies were really good. I very much like the change from the regular recipe, as did my fiance. I like to use dried cranberries or other fruit instead of raisens to change it up. Tends to enhance the flavor of the cookie. I didn't think these were at all too spicy. I'm even thinking that with the next batch I'll add in extra spice such as Allspice and/or Nutmeg (1/2 to 1 tsp of each).

Best Hamburger Ever

These were very good. Even with the onion mixed in the kids really liked them. They mix up quick. We left the cheese out of the mix as my daughter can not have dairy, and they still mixed and held together well.

Glazed Meatloaf II

Out of a family of four, two really liked this recipe. I myself thought it was good, but nothing special. 1 hour is too long for 2lbs of meat and it was a little dry. The sauce on top never "glazed." But all of it got eaten up that same night very quickly.

Muenster Chicken and Mushrooms

This is really good! Since the cheese is put on at the beginning of the cooking time, I thought that by the end of cooking it would have slid off the chicken. That didn't happen. I also though that by adding the broth into the pan it would make the breading soggy. That didn't happen either. It turned out moist and with wonderful flavor! Definitely a keeper.

Monterey Chicken with Potatoes

My husband and I just loved this (tho I had a hard time convincing our kids that cilantro tastes good :-) I used 1/2 cup cilantro because I just adore it. But it can be overpowering, so be careful. I used the juice from 1 lime rather than the 1 tbs. the recipe called for. Also, the potatoes need more flavor. I suggest spicing them up well before putting them in the pan, and then pouring any leftover lime-butter over them. Will definitely be making this one many times!

Chicken Casserole Mississippi

All around a very good casserole. The family loved it! I ended up by accident mixing the sour cream into the caserole rather than the crackers, and it turned out great. Couldn't imagine mixing it with the crumbs.

Italian Meatball Sandwich Casserole

This turned out much better than I thought I would. I thought that the bread would be soggy, and it wasn't at all. The only thing I would do is put in less mayo as the flavor of it seems to take over. I had to put in a lot more seasoning to balance out the taste. I spread the cream cheese mixture over the bread first before cutting. Didn't make sense to spend time tediously applying it to each little cube. Also, next time I would make the meatballs a bit smaller so there would be more of them. All-in-all the dish was quite cook and the family really liked it.

Quick Cheeseburger Pie

This recipe was quick and easy, and the kids loved it. Hubby thought it was good, but could use some extra flavor. I used an unbaked, frozen, pre-made pie shell, cooked it halfway, added the meat mixture, then baked the whole thing for 15 min as stated. I also browned the beef, onion and garlic all together rather than in stages as the recipe suggested. Both changes made preperation much faster. I added in Worcestershire sauce and Hamburger Seasoning. Will be making again, but need to find something to amp up the flavor.

After mixing the sauce with the pasta, let it sit for a bit and it will thicken. The dish was easy to make and came together quickly, but just really didn't have much taste. It needs a lot more of the spices added to it, such as garlic, pepper, red pepper flakes and parmesan, as well as a protein such as shrimp or diced chicken and mushrooms.

Fettuccine with Sweet Pepper-Cayenne Sauce

This dish was amazing! The flavor hits your mouth the moment you put a bite in. I cut the cayenne down to 1/2 tsp and there was still enough spice to make it lively. I used 16 oz regular spaghetti and should have doubled the sauce. The recommendation to use more Parmesan is right on. Plus I used two heaping tbs of pre-minced garlic. I added diced chicken and shrimp to make it more hearty. Will definitely be making this again!

Cheesecake Topped Brownies
