Crab and Swiss Melts

These were so very good! The kids argued over who got the last few melts, right down to splitting the last one in half. Some people said there was too much cream cheese for the amount of crab, so I just added more until I thought it was a good ratio (used fake crab). Also added green onions as others suggested. Didn't have Swiss, so used a pre-shredded pizza mix of cheeses and that was quite good.

Spring Salad

This was SO GOOD!!!! Even my teen son who detests broccoli voluntarily went back for a second big helping. No better testament than that! Used cider vinegar since I didn't have white wine and it worked wonderfully. Used all red grapes since I didn't have green, and I think that worked well for color against all the other green veggies.

Cheesy Potato and Corn Chowder

Everyone loved this!! It made enough to fill a dutch oven, and I was told that I needed to make more, as there was only enough leftover for one serving. The amount of cheese can easily be doubled, and my family thinks the idea of adding bacon is a very good one for next time.

Tangy Cucumber and Avocado Salad

Loved how light and cool this recipe was! Perfect for those summer days. Definitely need to use firm avocados. I used someone else's suggestion to put all the ingredients in the bowl at one time before stirring (gently!) which helps keep the avocado from becoming smooshed. Has a similar flavor to guacamole, but the cucumber gives it a nice crunch.

Blueberry Zucchini Bread

I made exactly as recipe stated and it turned out very well and was so good! I didn't have mini loaf pans, so I used two regular loaf pans. I'm docking it one star because I believe the recipe uses way too much sugar and would be just as good by taking it down to just 1 1/2 cups or so. I also think the amount of cinnamon called for was too much. While I do love cinnamon, when I bit into the bread it was the first thing I smelled and tasted and it was rather dominating. I think half the amount should work fine. Plus, I think I may add in more zucchini next time. Left as-is the recipe should be renamed Cinnamon Blueberry Bread because those are the only two flavors that come through.

Celery Wine Baked Chicken

The flavor of this dish turned out to be quite nice, and it was a pleasant change from other recipes. I took the advice of other cooks and cooked it uncovered so that it wouldn't turn into a "soup." I'm very glad I did that. I also followed advice to brown the chicken first, then reduce the cooking time in the oven.

Bacon for the Family or a Crowd

I love this! It beats out the microwave and stovetop pan methods by far. From here on out I will cook bacon using only this method! The only thing is that we found it may take 20 minutes depending on the thickenss and number of slices you're trying to cook at once.

Grandma's Applesauce Cake

This was a really good cake and the family loved it! The only thing is that it needs to cook for just a tad longer. I don't know much about the difference between applesauce cakes and spice cakes, but this one tasted very much like a spice cake. It the applesauce added only for moistness?

Ham and Fresh Basil Pinwheels

I am giving it a 4 after having made one roll as written. It was quite good! Then I decided it needed a few things changed. I added just enough concentrated garlic into the cream cheese to give it a good, subtle flavor. I also added in provolone cheese and sliced turkey along with the ham (I used Black Forest). I wasn't shy with the basil, and they turned out really good!

Baked Whole Cauliflower

On the whole, this was good and made an impressive presentation. But it needs to cook much longer than what is stated, as mine ended up being still rather raw in the middle. It would also need to be cooked at a slightly lower temp to keep it from burning. The other issue is that it's difficult to make the topping stick, especially on the sides, and it falls off easily when cutting. Even though you wouldn't get the "wow" factor with presentation, it would probably be easier to cut it up into florets, sprinkle the topping over it, and then cook. It will cook more evenly and you will get more of the topping in each bite.

Baked Teriyaki Chicken

We made the sauce as written and it was really good! When we tasted it before cooking with it, we thought it was going to be too strong. But once it has cooked with the chicken, the flavor mellows out a bit and is so good. I think this will become our "go to" sauce! Like other reviewers said, double the sauce. We cooked only five chicken breasts and there wasn't any left over (dipped the chicken in, then used it to baste as they cooked on the bbq). Next time I think I'll try adding in sauteed onions as well.

Zucchini Pasta II

This was really good, and the family loved it - even the kids! I doubled the zucchini and chicken mixture (except for the stock) and used 3oz cream cheese. Worked well for 8oz of pasta. The cream cheese came through subtly w/o overpowering the dish.

Parmesan Garlic Bread

This was really good! It wasn't overpowering, yet the flavor of the herbs came through wonderfully. I will be using this from now on! (I used this mixture over potatoes that I cut in half lengthwise, scored the tops in a criss-cross pattern, and baked at 400 degrees until done. Was great!)

Banana Cream Pie Made Easy

This was indeed very easy and quick to make. I didn't add the bananas as fresh slices always seem to look so bad after the pie has been cut into. Instead I sliced them over the top of individual pieces of pie just before serving. I also left out the crushed ice step and it was fine. But I gave this only two stars because it tasted like Jell-O banana pudding, only in a crust.
