Easy Quiche

Excellent, especially for how easy it is to make! Reading other reviews, I cut my skim milk use back a bit and it came out perfect. Definitely a keeper.

Ham and Bean Soup I

Fabulous way to use leftover ham from Christmas. I'm not sure what "ham hocks" are but I had spiral sliced ham leftovers that I cubed and added a beef summer sausage that I received as a gift from Hickory Farms instead of the Italian Sausage. This was SO easy!

Basic Corn Muffins

Yum! Super Easy! I used 1/4 c. wheat flour as well as 1/4 c. soy and almond flours to add a bit more nutrition and they are SO yummy!

Wonderful! Easy, moist, healthy . . . what more could I ask for!? This has been a muffin pregnancy. At least eating these I know I am getting good nutrition instead of eating muffins from the store that are just sugar. thanks for sharing!

Creamy Au Gratin Potatoes

Awesome - reminds me of my grandmother's home made au gratin potatoes!! Microwave the potatoes till tender before baking and the baking is so much quicker!! Making this recipe for a third time.

Delish! pureed some jalapenos with the black beans for a little spice. I was worried b/c my husband doesn't care for pumpkin/squash flavors but it is so subtle he really liked it.

I do this in the bread machine and it comes out so perfect and so easy. I have to use more like 4 c of flour but if I do I can take it out, divide it into 2 balls. Let those rest 10 min and then roll them right out nicely.
