Caramel Corn IV

I think I'm grateful I read reviews before making as I adjusted temp down to 275 and cooking time down to 15 min with stirs at 5 and 10 mins and it came out PERFECT!! Everyone is devouring it. Follow the recipe otherwise and it comes out great. I put the warm popcorn in a big bowl before dumping the goo over it so I could mix it better before returning to the 9x13 pan (a little bigger would have been helpful for the every 5 min mixes)

I can't stop making this - its so crunchy and delicious, easy to make. I add a little diced red pepper and use Splenda instead of sugar.

Excellent recipe. I wish I'd read the reviews first and cut back on the butter. I would have liked it just as well less greasy and lower fat. But its a keeper.

Caribbean Zucchini Bread

I made one loaf and a pan each of mini (bake abt 15 min) and regular sized (bake abt 20 mins) muffins and my kids are devouring them! What a great way to sneak them their veggies!

very good! I added some lime juice to marinade and did some of the kabobs with turkey bacon to cut down on fat. . . great easy recipe. We love kabobs in the summer!

Sugar Cookie Cutouts

Wow, I never really liked sugar cookies but these were delish and easy. I thought they were more like shortbread than the sugar cookies my mom made. I added the almond extract as someone suggested. We didn't have the heavy whipping cream so used half and half. Will make again but I need a good frosting recipe now!

Mom's Cucumber Salad

Yum!!! I am so addicted to these with all of the free cucumbers people have been giving away, my mom used to make them too. The hint about letting them sit salted then rinsing definitely worked well. And I used splenda instead of sugar (and light mayo). Delightful!

Whole Grain Banana Muffins

Yum! Delish! Like another reviewer, I have been on Weight Watchers for a while and look for new healthy recipes. . . LOVE these! Of course then I ate 2 of them :) But they were just so moist. I used all wheat flour as I didn't have the pastry flour. I also used a brown sugar splenda blend that I just picked up instead of the white sugar. Of course I could have trimmed a bit of fat and calories if I omitted the pecans but they added such a nice flavor to the banana. Thanks for sharing!! Will make these again.

Easy Mexican Casserole

Wow, delish and so easy! I took the recommendation of adding corn, and substituting black bean and some Monterey Jack. A little cilantro under the cheeese and this was a big hit here. . .with 2 more meals for the freezer!
