Egg Sandwich

I scrambled one egg w/seasoning and a touch of milk. Put it in a coffee cup sprayed w/Pam and cooked for 1 min in microwave. It came out fluffy and tasted great. I made the toast in the toaster & added cheese and a piece of bologna that I cooked 1 min in the microwave. Also, added mayo on the bread. Was DELISH and so much easier than scrambling on the stovetop. Thanks for posting.

Delicious Pumpkin Bread

Cookies for Rookies

I only added 2 TBS of pb & more chips. It was bland and cake like. The next day it was too soft and falling apart. Couldn't taste the chocolate flavor at all :(

Pumpkin, Sweet Potato, and Leek Soup

I modified this some. I left out the leek, added a touch of curry, cinamon, ginger for seasonings. I sauteed the onion w/some garlic and added zucchini and celery. I had fresh pumpkin puree so used that w/chicken broth and kept the pumpkin and sweet potato in chunks since my hubyy likes chunky soup. My 3 1/2 yr old ate 2 bowls & said make this everyday. My 2 yr old ate it as well. Yummy. It was thin though...maybe cause I didn't puree the veggies? I also added some shredded pork and rice before serving. I will be making this again!!! Thanks for posting.

Mizithra Browned Butter Pasta

I made this tonight, but didn't skim the fats off the butter. It definately didn't taste the same. My butter was carmel & my mizithra cheese was finely grated. What did I do wrong?

Peanut Butter Carrot Cookies

These were very good. Based on reviews I tweeked it alittle. Used 1 c brown sugar, 1/3 c milk, 3/4 c pb, 1/4 c white sugar, 1/2 c of wheat flour in addition to 1 c all purpose flour, 1 tsp baking soda added 1 tsp vanilla and sprinkle of cinnamon. The rest of ingredients as recipe stated. These did not crumble w/the tweaks. Oh also added 1/2 c more carrots & used crunchy pb instead of reg. Flavors blended nicely. It was easy. Will be making again. Thanks for posting.

Elegant Scalloped Potatoes

Yummy. Used cream cheese since I didn't have velveta. Added sauteed onions/garlic to sauce, sour cream and chives. Added extra garlic, onion powder. Hubby said it tasted like crab cakes.

Oven Fried Chicken III

This was delicious and my kids kept asking for more. I used 1/2 cornflake crumbs and italian bread crumbs. Dipped in hidden valley ranch dressing to give it some extra flavor. It's a keeper!! Thanks for posting.

Refried Beans Without the Refry

These were so easy to make. The hardest part was smashing them bcuz I didn't have a potato masher. I used serrano chiles. I think it needed more flavor. Will add some bacon at the end. I kept it bland because of my little ones, but will definately make again. I reduced the salt. My onion didn't desolve like others mentioned. Will also try cilantro too. Thanks for posting.

My Favorite Mexican Rice

I left out the cumin because I don't like it & added serrano chiles cause that's what I had on hand. I used 2 c chicken broth & 1/2 c water. Sauteed garlic w/the rice when browning. It was easy and tasted good, but a little on the dry side. Will add more broth next time. Will make again. Thanks for posting.
