Slow Cooker Chicken Taco Soup

This soup is really good and got really good reviews from everyone that ate it. I'll definitely make it again. I made the following changes to this recipe: added 1 can of pinto beans, 1/2 can of low-sodium chicken broth, two tablespoons of chopped jalapeno, 2 cloves of garlic, 4-5 drops of tapatio, pinch of salt & pepper and instead of taco seasoning, I used cumin and chili powder. I also served it with shredded cheese, chopped green onion and 5-layer bean dip. With the addition of these items, I would definitely give it a 5*.

Black Bean Hummus

LOVE LOVE LOVE this recipe! I've used it soooo many times and have had nothing but rave reviews from anyone that tries it! In addition to what's listed, I also add about 1/2 tablespoon chopped jalapeno, 1/4 cup of low-sodium chicken broth (instead of the reserved black bean liquid) and rinse the beans before adding to the blender. Enjoy this one - your guests will thank you!

Spicy Indian Chicken and Mango Curry

My husband and I love this recipe and have made it on numerous occasions. We pretty much follow it exactly, but we also add in some pineapple (to both the sauce and actual chunks in the dish - only use a bit though because the pineapple can overtake the mango flavoring) and about a tablespoon of minced ginger. I also serve it with shredded coconut on top and use an indian-inspired rice as a base (cook your rice with browned onion and a bit of cinnamon and cumin). DEEE-LICIOUSNESS!

Chicken Parmigiana

What a delicious and simple dish!! definitely a KEEPER!! I pretty much followed the recipe to a tee, except for the following: -placed the breasts in a Ziploc and flattened them to a 1/4 inch thick by pounding with a can of beans (couldn't find our meat mallet, so I had to improvise) -added approximately a tablespoon of garlic powder and italian seasoning each to the plain bread crumbs -didn't have mozzarella on hand, so I substituted with pepperjack (which came out delicious, btw) I used a Bertolli tomato and basil sauce and served it with a side of caesar salad. Both my husband and I couldn't get enough and will definitely make this again!
