American Breakfast Casserole

Reviewed: Dec. 18, 2012
Loved it! Made it today and it got rave reviews. I will say that we cooked it for about 10-15 minutes more than stated because it didn't seem to be setting. It was perfect and I will definitely be making this again.

World's Best Lasagna

Reviewed: Jan. 12, 2011
Fantastic!!! Made this last week for my family and they loved it. It was really not anymore difficult to make than other lasagnas if you are used to making your own sauce. In fact, I think the sauce recipe may be my new favorite. The only change I made was to use whole grain lasagna noodles which were delicious. This will definitely be my "go to" lasagna recipe from now on! Oh, and even better the next day!!

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Oct. 18, 2010
Just made this for dinner tonight! It was so easy and so delicious. The only change I made was to cook in a skillet as others had suggested and I used low fat mayo and low fat sour cream for the sauce. Served along side green beans and it was a perfect meal. Will definitely be making this again!

Cheesy Beans and Rice

Reviewed: Jun. 23, 2010
My whole family loved this! Didn't use the onions just because I was cooking in a motorhome and didn't want the whole place to smell like onion. Otherwise, I followed the recipe exactly and it was perfect. Definitely getting added to the "must make" file. Thanks so much for sharing.

Easy Bacon and Cheese Quiche

Reviewed: Jun. 11, 2010
Wonderful recipe. I did add some asparagus (only because it was on it's last leg in the fridge) and a few chopped artichoke hearts, again just because I needed to use them. Served it to a friend for lunch and she raved about it. I did separate everything except the eggs into to pie shells as I thought there was too much for one. Then just doubled the eggs and half and half and made two quiches. Kept one and sent the other home with my friend. Thanks so much for sharing such a great recipe. It definitely will be going into the "keeper" file.

Apple Spice Rice

Reviewed: May 24, 2010
This was delicious! Was looking for something different to do with rice that would go well with pork. This was perfect! My husband said his mom used to make this dish when he was little and it hadn't had anything like it since. He's 48!! He was very excited. Will definitely be making this many times and recommending to all my friends.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Apr. 7, 2010
Wonderful! The only change I made was to cook the asparagus in a cast iron skillet with a little EVOO. When it was just right, I removed it, kept warm and used the same skillet for the sauce. Tossed the asparagus back in just to coat and then served. It was a huge hit.

Roasted Garlic Lemon Broccoli

Reviewed: Apr. 2, 2010
My new favorite vegie side dish! I did make a few changes based on another recipe I saw on a different site. I used broccoli, cauliflower and brussels sprouts. Two cloves of garlic, sliced. Baked at 425 for around 18 minutes. When it was nicely browned I pulled out of the oven, added a little splash of olive oil, fresh lemon juice and a little parmesan cheese. I've eaten 3 out of the last for nights. Would have been 4 but went out to dinner. Love it!!!

Cha Cha's White Chicken Chili

Reviewed: Feb. 9, 2010
Loved this! Because my family does not like things too spicy I didn't use the jalapeno peppers and only used 1/2 tsp ground cayenne. The only other difference was that I used tequila lime flavored frozen chicken breasts because that's what I had on hand. This, as my husband said, is a keeper!

Cinnamon Raisin Bread I

Reviewed: Feb. 3, 2010
Made this today. I would have given this recipe four and a half stars but I haven't figured out how to do a half star yet. First time ever making bread so I was a little nervous. Was very pleased with the end result. Didn't have three pans so I baked two in the pans I did have and divided the other third of the dough into three pieces and backed in mini pans. All of them came out great. The only thing I would change is I would add cinnamon to the dough itself to add more of a cinnamon flavor.

Angel Hair Pasta with Shrimp and Basil

Reviewed: Feb. 3, 2010
My son and husband enjoyed this more than I did. I found it to be a little bland. I only had three 14.5 oz cans of tomatoes so that's what I used and I think that was plenty. I will make this again and just try adding some spices to the sauce. Also, any italian will tell you that you NEVER put cheese on seafood pasta dishes so I skipped the cheese.

Baked Potato Soup V

Reviewed: Jan. 31, 2010
Just made this for tonight's dinner. The texture was wonderful, it was easy to make though it did take me much longer than 15 minutes. That's because I baked the potatoes in my advantium oven instead which was a complete waste of time and I cooked real bacon instead of using bacon bits. My only complaint and the only criticism from my family was that it was a little bland. I even added more salt and pepper and it still needed a "kick". Will definitely try again and just change the seasoning.

Cornish Game Hens with Garlic and Rosemary

Reviewed: Jan. 19, 2010
YUMMY! That's the only word that adequately describes this dish. I followed someone else's review and added a little chicken broth to the pan when I first put it in the oven. I also only cooked 2 hens but made all the sauce. Made twice baked potatoes and some yummy green beans on the side. Will definitely make this again.

Salsa Chicken

Reviewed: Jan. 18, 2010
Had some frozen chicken breasts that were Tequila lime flavored and was in a hurry for dinner. Thawed them, cooked according to the directions here. I omitted the taco seasoning since they were already flavored. the only other change was some black olives added to the top and some fresh cilantro when I served them. As others have said, great flavor for such a simple dish.

Simple Grilled Lamb Chops

Reviewed: Jan. 10, 2010
This was delicious! have a recipe that we normally use for Lamb Chops but didn't have the mustard so I searched for something else. This came up and since I had all the ingredients I decided to try it. Glad I did. The only change was that I used White Wine Vinegar because that's what I had on hand. Otherwise I followed the recipe to the letter. Paired with some roasted potatoes and onions and this was a meal to remember. In fact, we were all wishing we had cooked more lamb chops as we really could have eaten more because they were so good!!! Thanks for sharing this recipe.

Wonderful soup! The only change I made was to replace the water and chicken bouillon with chicken broth. Added some grated cheese at the end and it was perfect.

Perfect Pumpkin Pie

Reviewed: Dec. 4, 2009
This is the exact recipe that my mom always made when I was growing up. The only difference is that she used pumpkin pie spice instead of the other spices. I've been making it now since she passed away in 2000. I made it this year for Thanksgiving and my 8 year old nephew ate almost the whole pie by himself and proclaimed it the best pie he had ever eaten. That was all the praise I needed!

Easy Sour Cream Cheesecake

Reviewed: Nov. 11, 2009
WOW! That's all my husband, son and dinner guest kept saying. This was a delicious and very easy cheesecake to make. The only difference was I made a graham cracker crust at the last minute because I dropped my premade crust in the sink by mistake. Topped with a blueberry topping and it was , by far, one of the best cheesecakes we've every had. Thank you!!!

Simple Herb Rice

Reviewed: Nov. 11, 2009
Very good recipe! Always looking for something to add a little pizazz to rice and this worked like a charm. Didn't have instant rice so I used regular rice instead. I just followed the cooking directions on the box of rice and added the cooked onions, bouillon cubes and spices. It was a delicious side dish and will definitely be making again. Thanks.
