Chipotle Crusted Pork Tenderloin

I was looking for something to do with my pork tenderloin and this looked good. The package of pork I had was about double what the recipe called for, so I doubled all the ingredients except the chipolte. I also baked it rather than grilled it. It was very good and extremely tender. It also froze well, which is a big plus for me. When I thawed it out for lunch today, it was just as tender and jucy as when I first made it.

Artichoke Chicken

Loved this recipe! I made the following changes: I cut the chicken in strips, used 1/2 mayo and 1/2 sour cream, both low fat, used marinated artichokes and added fresh mushrooms. I put the chicken in a baking dish, put sliced mushrooms over the top and spread the artichoke sauce over the muchrooms and baked it for 30 min The only reason I gave it 4 stars instead of 5 is that the chicken was slightly dry.

The Real Mojito

YUM!!! I made a couple of changes...I used coconut rum, only 1T sugar and 2 oz rum. So good!! And very light, as far as cocktails go.

Sweet Chops

Very tasty and easy. I used apple cider instead of water, at another poster's suggestion. I think that added flavor. I did have to add quite a bit because it kept cooking down and I wanted to keep liquid in the pan. Next time, I may up the amount of the garlic, soy sauce and Worcestershire sauce to kick up the flavor at bit.

Vegan Chocolate Cake

I needed to make a cake for a small gathering, but I wanted to use ingredients I already had. Plus, I didn't want a large cake because I didn't want leftovers. This was the PERFECT cake for what I was looking for. The ingredients are staples, it's simple to make and I baked it in an 8x8 pan. I added chocolate chips, but you really don't need to. The cake (which I made the night before I served it) was very moist. I frosted it with 1/2 frosting recipe from the Hershey's Cocoa box. Everyone loved it! No leftovers at all. I'll make this anytime I need a small cake.

Loved this recipe! I think I added more onion and pepper than this recipe calls for, but I kept all the other measurements as it states. Next time I will make a double recipe and freeze some.

Chili Chicken Pasta Topper

I thought this was very good, but I did make some changes (mostly due to what I had on hand). 1. when cooking the chicken, I added some chopped onion 2. I used regular Cream of Mushroom soup and added some dry basil and parsley for the herbs 3. for the pasta, I used Wacky Mac 4. I served more Parmesan cheese at the table...yum The reason I didn't give it 5 stars is that next time I want to tweak is some more. I think it would be good to either marinate the chicken or rub garlic powder on it. It was really good, though, and was great left over.

Green Chile Chicken Stew

I thought this was really good! I did do things slightly different. I used turkey instead of chicken. I made a turkey dinner over new year's weekend and instead of picking the leftover turkey off the bones once we were done eating on it, I just put the whole thing in the freezer. To make this stew, I pulled the leftover turkey out and made the broth with that. I followed the recipe for the rest, except the store only had 1 habanero the day I went shopping, so I used 1 habanero, 1 very mild jalapeno and 3 medium hot serranos (slim pickins at the grocery store that day!). My stew turned out thick and stew-like and very yummy. The only problem is, it made sooooo much. I think next time, once I have made the broth, I will freeze 1/2 of it and then halve the rest of the recipe. I'm afraid to freeze it once I've added the potatoes...I've never had luck freezing dishes with potatoes in them. I also think next time I could add more tomatoes and green chilies.

Spinach Cheese Ball

I made this for a small Christmas gathering. It was good, but not great. The other adults seemed to like it ok, but didn't think it was anything special. I made it the day before so the flavors would have time to mix and mingle.

Sugar Cookie Frosting

Very good frosting. I made "The Best Rolled Sugar Cookies" from this site and frosted them with this frosting. This frosting tinted easily and was easy to work with.

The Best Rolled Sugar Cookies

These cookies are excellent! I made 2 batches for a large Thanksgiving gathering. The 1st batch I rolled a little thick, so the second batch I rolled thin. I think I liked the thin cookies best. I frosted them with "Sugar Cookie Frosting" from this website. I enjoyed them both with and without the frosting. They were a big hit at the Thanksgiving gathering, too.

Chicken Spaghetti Casserole I

I was looking for something easy for dinner and that I already had the ingred. for when I came across this recipe. I didn't have pimentos or bell peppers, but a quick glance at other reviews convinced me to use Rotel instead. I used the juice from the Rotel instead of the wine. The Rotel gave it a little bit of a kick, which was good. Overall, this was a quick, yummy recipe. I gave it 4 stars because it didn't totally WOW me, but I will be making it again!

World's Best Lasagna

I knew I really liked this recipe when I realized that I kept snacking on the lasagna. I even liked it cold. Wouldn't change a thing. Next time I'm going to double the recipe and freeze it. I was able to freeze a little of it this time and when I thawed it and ate it, I think it was even better, if that is possible.

Italian Cream Cake II

Fabulous! I made this for a small get together with some friends. Since there weren't many of us, I didn't want to make a whole cake, so I made 1/2 the recipe. The batter all fit in 1 9" round and cooked perfectly. I cut the round in half and frosted it as a 2 layer cake. Everyone loved it...and as I had hoped, there were no left overs!

Mushroom Cube Steaks

This recipe is very quick and easy. It's also very tasty. I've made it a couple of times now. It doesn't have a "wow" factor, which is why I only gave it 4 stars, but it is great comfort food.

Cheddar Chipotle Bread on a Pizza Stone

OMG! So good. I loved it right out of the oven, but toasted is excellent, too! I added more flour when I was kneading in the chipotle in adobo because it got very sticky, but other than that, I did not change a thing. I also left the seeds in. It has a kick, but not to much.

Tangy Cucumber and Avocado Salad

I wasn't sure about this recipe, but I wanted something different to use up the cukes from my garden. It turned out really good! I followed the recipe just as it is. It was good the next day, too. Next time I may take some suggestions from other reviewers and add tomatoes and/or cumin. I served it with Jalapeno Chicken from this site.

Tres Leches 'Three Milks'

One word: Incredible!! I substituted coconut milk for the evaporated milk, as suggested by someone else. I frosted it with Cool Whip and sprinkled toasted coconut over the top. Then I garnished with large strawberries cut in half. My guests loved it and were amazed when I told them how easy it was to make! This is a new favorite with me!
