Caribbean White Beans

One of the best chilies ever. It had just the right amount of spices (and I do like spice!). Perfect for the fall weather. Serve with cornbread and pumpkin butter, or some coconut shrimp!

Baked Coconut Shrimp with Spicy Dipping Sauce

Amazing, but a few tips: I would use very finely shredded coconut though so it sticks to the shrimp well. Also, the dipping sauce was just ok for me. If you are close to an Earth Fare, it's worth going to their salad bar for a side of their coconut mango dressing - it pairs PERFECTLY with this!!

Lahmacun Turkish Pizza

If this had taken less time I would have given it 4 stars, but in the end, it just wasn't worth it to me. The main complication with this recipe is that, if you have a large family, you are stuck cooking the entire time while they are eating (because, at least in my oven, I could only bake 2 at a time), and are left by yourself to eat - after all those hours that you spent preparing this! The bread was delicious, and the meat filling was good. My kids all loved it, even the garlic yogurt sauce; my husband and I thought it was better than ok, but not excellent. Just my two cents! :)

Pastel de Tres Leches (Three Milk Cake)

Of all the recipes on this site, use this one. It's perfectly moist - just follow the recipe exactly and you'll be fine. I let it completely cool in the fridge overnight, then put a layer of Cool Whip topping on and refrigerated it for a few hours again before serving. Next time I might try a 9x13 dish to see if it makes it even more moist. :)

Sun Dried Tomato and Pine Nut Stuffed Beef Tenderloin

I was very disappointed, considering the cost of this meal. :( It was dry, not as flavorful as I had hoped, and not worth the over-$100 I spent for a 5-lb. tenderloin and the stuffing. Next time I am sticking with a juicier crock pot recipe.

The pros and cons.... The plus is that this is ALL protein, no carbs. The meat-loving half of our family really liked this one. It is also a good filling meal that won't leave you hungry after a few hours. The cons: first, this takes a lot of attention because as the beans get softer they begin to mush and stick on the bottom of the pan (it's a nice consistency when it's finished, but you have to stir every 10-15 minutes for the last 2-3 hours). Second, this is LOADED with fat. And third, it is quite costly. The taste was pretty good, and it is an interesting dish, but not worth the time.

Banana Blueberry Muffins with Lavender

OH. MY. GOSH. I am not normally a muffin person, but WOW. I will make these again, and again, and again. I used 2 tsp. lavender flowers. While using frozen blueberries is ok, use fresh if they are in season - it's worth it! I also used 2% milk. Make sure your bananas are beginning to brown, and use 2-3 regular-sized or 2 very large.

Manicotti Italian Casserole

KIDS LOVED IT (and I have heard my husband specifically bring this dish up in conversation multiple times now). Changes I made were: add some salt and pepper, add a TON of fresh basil (I use the fresh tubes of it), omit the mushrooms, add some cheese into the pasta mix, and place the pepperonis underneath the layer of cheese. For the pasta sauce, use one jar of tomato basil and one jar of chunky vegetable. I also used Ranzoni's Garden Delight pasta, which adds to the flavor. It came out a huge hit.

Creamy Italian White Bean Soup

WOW. One of the best and most flavorful soups I've had. Excellent for the cold weather, but still not too heavy to have any other season. Very refreshing. Go heavy on the thyme.

Broccoli Chicken Divan

This one is kid-friendly for sure! The only reason I'm giving it a 4 instead of a 5 is that, as someone who loves a lot of flavor, this was lacking a bit of zing for me. You could spice it up a bit with some herbs and salt, or even a bit of cayenne.

Mrs. Sigg's Fresh Pumpkin Pie

I hate to be the first to rate this below 5 stars, but it really was just ok for me. In fact, with a familiy of 6, it took almost a week to finish. If something is irresistible, it is usually gone within 2 days. I can't think of what it was lacking, but there was just not enough flavor.

To add to authentic taste: As the previous reviewer suggested, add a stick or two of cinnamon when boiling the plantains. For a sweeter taste (or to make it more likely that ninos will eat them), when you mash the plantains, add a bit of sugar. I also make salted cinnamon fudge to put inside. If you want it purely as dessert, you can even use cinnamon fudge in place of the beans; but to keep it authentic keep the beans, too.
