Vegan Agave Cornbread Muffins

Amazing!!! Better than normal corn muffins, in my opinion. I didn't use salt, and these still turned out great. Next time, I'll reduce the sweetness a bit so I don't feel so guilty eating these. I love that these are moist without having a ton of oil!

Baked Zucchini Chips

Amazing!!! One of the best vegetable side dishes I've made, EVER. I followed SAK's suggestions, and added a bit of African Smoke pepper seasoning, too. Also, I put a fair amount of sriracha in the egg mixture. Truly delicious dish! I will be making this again and again!

Avocado Peanut Butter Brownies (Vegan)

This recipe was absolutely AMAZING. As other reviewers suggested, I nixed the oil completely. I also only used 1 cup of brown sugar and no salt ("healthy" brownies) and I used almond milk instead of soy. HEAVENLY. I only recently started cooking vegan, so I know what normal brownies taste like. These are comparable if not better! And less guilty! They're perfectly flavored, extremely moist but not too heavy, and delightfully fudgey. I could rave on! Mine are only 245 calories a brownie. I will definitely be making these again!!!!

Chef John's Baked Eggs

WOW! This is definitely my new favorite breakfast recipe. SO easy to prepare (this is the first time it took me SHORTER than the advertised prep time), just pop it in the oven, and voila! Totally delicious, filling meal. Really, this is better than most breakfasts I've had in a while. I was low on pasta sauce, so I used salsa for the rest - that gave it a nice kick! Low-ish carbs, made from ingredients I always have around the house... Thanks for introducing me to this spectacular recipe that I know will become a staple in my diet.

Moussaka

This tasted absolutely DELICIOUS!!! I love moussaka, and I decided to challenge myself with this recipe. The flavors were absolutely heavenly, but the texture of mine was a little off -- hence only 4 stars. I made it exactly as prepared. It did NOT take only 45 minutes to prepare. Also, it took at least 75 minutes to cook properly. The beschamel wasn't nearly as solid as I would have liked. The extra eggs that reviewers mentioned would have probably helped. Also, I agree that baking the eggplants would have yielded a better, faster, healthier result. It was still a total hit at my dinner party, but I wish it was less mushy.

Spiced Sweet Roasted Red Pepper Hummus

SPECTACULAR! I'm Israeli, so I'm pretty picky about my hummus. This is the BEST hummus I've made so far! I have made it for several dinner parties, and it's always a HIT!!

Banana Sour Cream Bread

This is the best banana bread I have ever baked OR tasted. It's actually better than store bought or bakery banana bread! It is SO incredibly moist and fluffy. I could eat another pan! Everyone always asks me to make it for potlucks.

Fresh Asparagus Soup

This was the BEST soup I have ever had!! It was so flavorful and delicious! I served this to a few friends who absolutely hate asparagus, and even they loved this soup. The flavor combination is truly exquisite! And it's not that unhealthy either! I used nonfat greek yogurt instead of regular to up the protein. It also wasn't that hard to make. I'll certainly be making this recipe again and again!

Wilted Spinach

I thought this was absolutely DELICIOUS. I could make this again and again -- all of the ingredients are things I love that I always have around the house. My guests thought the balsamic overpowered it a bit too much and thought the entire thing was a little too intense. I thought it was great, and maybe next time they're over, I'll dial down the garlic and balsamic.

Honey Baked Lentils

WOW!!! This is not a traditional lentil dish! I could make this every week, they were so delicious and not unhealthy either. Even friends that hated lentils really liked this dish! I will definitely make this again.

Spaghetti Squash with Pine Nuts, Sage, and Romano

I really liked the method of preparation and the flavor combination--except the sage. Maybe I just don't like sage in general, but I think it overpowered an otherwise exquisite, subtle dish. The pine nuts and romano were great though.

Pineapple Banana Bread

I thought these were absolutely wonderful. I thought they were just the right amount of sweet and citrusy, and they were SO moist, even days after baking. Some people didn't completely enjoy the pineapple in it, though.

Gluten-Free Peanut Butter Cookies

These are some of the best cookies I have EVER made!! I made them once during Passover, and ever since I have been HOOKED. If you love gooey cookies, you MUST make this recipe. I like to take them out before they've fully hardened, so it's basically like warm cookie dough. These stick to the pan, so make sure you use parchment paper or plenty of butter!

Spinach Bars

WOW! This is seriously AMAZING. People now demand that I make it for every potluck I host/attend. I don't have kids, but I absolutely love spinach and cheese, so this recipe is perfect for me. I have made it quite a few times as is, and it's quite good. However, here are my favorite alterations: Lightly sauté onions before baking -- otherwise, they will be a little crunchy and too powerful. I don't like mushrooms, so I leave them out. I use fat free cheese to cut down on the calories (and usually only use about 3 cups). Also, I use half minced garlic, half garlic powder -- to better distribute the garlicky taste.

Cajun Chicken Pasta

I think it's much better without the mushrooms. Otherwise, a really fantastic dish! To slightly lower the fat content, I use half and half or light cream with a bit of flour/cornstarch. I made this for several dinner parties. Everyone really loved it! It also makes homemade pasta soar through the roof with flavor.

Ultimate Party Meatballs
