Graham Cracker Crust

Chicken Marsala

I made this for 20 people for Christmas dinner and everyone loved it! I wish there had been more leftovers, b/c I think it was even better reheated. My only change was to cook some onions with the mushrooms, and a little butter to finish the sauce at the end.

Shrimp Scampi III

I quadrupled the recipe easily and made it for a crowd on Christmas Eve. Everyone loved it and it went together quickly so I could spend time with our guests. I nixed the cheese this time, and would add more garlic in the future if I was just making it for myself.

Pumpkin Maple Pie Supreme

My mother & I made this for Christmas, thinking it would be a nice change from the standard Thanksgiving pumpkin pie made with the recipe off the back of the Libby's can. Other than the darker color due to the tasty grade B real maple syrup, you couldn't really tell a difference (kind of a waste of good maple). Guess I'll just stick with the classics.

Kim's Virtuous Mini Pumpkin Muffins

Great taste and amazing moist fluffy texture for a low-fat recipe, but cut the salt way down! I reduced the salt to 1 Tsp and used low-fat buttermilk in place of regular milk. I will make these again, but with only 3/4 tsp salt and the more traditional pumpkin-pie ratio of spices. Mine also took longer to bake than the recipe states.

Strawberry Rhubarb Pie III

I am now a rhubarb convert - this may have been my best pie ever! (even using the website to scale it down to a smaller pie, it was still perfect.) I made it w/ the crumb crust, with brown sugar instead of white, and it was tasty & gorgeous!

Apple Brine for Turkey the Night Before Cooking

Made a great tasting turkey. The whole brining process was very awkward with a 20-lb turkey, no utility sink, and a full fridge, but that's not the recipe's fault.

Slow Cooker Cranberry Roast

Super-easy, and a great smell to come home to at the end of the day. Next time I will substitue my own dried onion and beef bouillon mix for the soup mix, as it was too salty for my taste.

This also works wonderfully with soy milk, either plain or vanilla flavor. And if you stir carefully, you won't get lavender colored batter.

Rockin' Rhubarb Pie

Rhubarb and custard is a great idea, but mine, too, ended up more like rhubarb and cream sauce. Tasty, but not the best presentation. Old Betty Crocker cookbooks have good fruit & custard pie recipes, if you want further guidance.
