Wild Mushroom Stuffing

Took forever to prepare. Turned out good, but not great. I had to substitute a lot of ingredients though because I couldn't find them, so this is probably why it wasn't as good.

Mexican Rice II

I used brown rice which took forever to cook, plus I thought I had garlic salt but didn't so I just used salt...big mistake! It turned out way too salty, but overall it had a wonderful authentic flavor. I would make this again, but correctly next time!

Cocoa-Coffee Spiced Chicken with Salsa Mole

Sorry, but this was just ok. I thought the chocolate chips in the Salsa Mole did taste a little odd when you bit into them, but my family didn't think so.

Easy Never Forgotten Guacamole

This was a little bland for me and my family even with the crushed red pepper. I liked the idea of adding the sour cream and cream cheese, but I ended up adding lime juice, cilantro, garlic, and extra salsa and crushed red pepper to add flavor.

I accidently bought heavy cream instead of whipped cream so I didn't add the cream, but it still turned out delicious!! Definitly double the recipe because the serving sizes are not acurate.

Easy Guacamole

Easy to make. Be careful not to use too much lime juice. I used bottled lime juice and I added too much- 3 tablespoons. I should have used 2. Otherwise it was great! Next time I'll try adding sour cream for variety.

Chicken Enchilada Soup III

This was delicious! My family loved it. I added a little bit more chili powder to make it spicier. Perfect the way it is, but you can add hominy for variety.

Quiche Lorraine II

This was my first time making a quiche and this was a simple but delicious recipe. My family loved it. I made two pies and froze one. I added a little bit more salt than the recipe called for-1 teaspoon instead of 1/2 teaspoon. Careful pouring the mixture into the pie shell- it over flows. Probably my lack of experience. Served it with fruit salad. Highly recommend!

Chili con Carne II

This was easy and my family LOVED it! My Mom said it was the best chili she ever had. She rates it a 7 star. I added a little extra chili powder to make it spicier and I left out the cloves only because I couldn't find them in the grocery store. Serve with grated cheese, scallions and tortilla chips!

Sauteed Red Snapper with Ragout of Black Beans and a Lemon Cilantro Sauce

I think I may have messed this up. The ragout of black beans and the lemon cilantro sauce was great, but I would definitely use fresher fish (not pre-frozen) next time. I didn't make the leek garnish. I think this was a little too advanced for me!

Best Marinara Sauce Yet

My family liked this alot. I added extra garlic. Next time I may try a dash of red pepper to spice it up. I served it over penne with fresh grated parmesan on top. Very good, but not something I would make if I wanted to impress someone.

D's Famous Salsa

My first time making this. I will NEVER buy store bought salsa again. This was easy! I added a little extra garlic and salt plus fresh chiles instead of canned. Next time I will add a jalapeno pepper in place of a chile, and a little chili powder to make it spicier. This recipe is fairly mild.
