pretty good, i added a few extra veggies, but that's nothing new. Made extra and stored it in the freezer, which was great for a quick lunch a few weeks later!

Alaskan BBQ Salmon

very delicious alternative to garlic, lemon and dill. I also used slotted foil to BBQ, for fear of the fish sticking to the grill. We still basted and flipped, the foil was only covering the fish loosly. (and parts of the fish did stick to the foil, so it could have been a disaster on the grill! We also saved some sauce for dipping. Thanks for the recipe!

i made these gingerbread by adding ginger, molasses, cinnamon, and nutmeg. It needed a little extra flour, but i was expecting that. My first attempt at biscotti, and everyone raved!

Savory Garlic Marinated Steaks

i marinated for two days, because i wasn't planning on using the steaks for two days anyway so i figured, 'why not just let them sit in a marinade?' They were fantastic. SO juicy and flavorful. I served them with garlic mashed potatos and steamed asparagus.

Penne Russo a la Vodka

this was completely delicious, but i did make a few changes because of what was in the house. I used cayenne pepper instead of the pepper flakes, and i only used an 1/4 t (and boy was it spicy!) i used vanilla vodka, because it was all we had, and i used 3 oz of meat because that's the smallest package it came it at the store! I also used rigatoni pasta because we had it, and we thickened the sauce with a slurry of flour and water. I will be making this one again, but next time i will also make it with rolls to sop up the delicious sauce!

Garlic Salmon

This was pretty good, i used dried spices because fresh weren't available. It lacked something.... i cooked it with carrots, onion, and celery for added flavor. I'll probably use this as the base for my salmon cooking, as i liked the foil method.

Fudgy Chocolate Cream Pie

This was very good. I think next time i'll add just a bit more cornstarch (it stood up well, but i'd like it even a bit firmer,) and maybe some unsweetened cocoa powder. I put it in an oreo pie crust which was a huge success!

Green Salad with Cranberry Vinaigrette

i tried the vinegrette on my own salad creation. It was very tastey! I made it for a bridesmaids lunchion (loved that it was pink!) and it was a great balance of sweet and tangy. I can't wait to try it when cranberries are in season: it's summer, so i used a handful of craisins (dried cranberries) and a splash of water instead.

Avocado Soup with Chicken and Lime

very tastey! I made quite a bit to feed my mom, my sister, and some hungry men, and it satisfied all! My sister doesn't like cilantro and my dad doesn't like avocado, so rather than add them to the soup i added them to individual bowls, and everyone could have as much as they liked of each. I wasn't going to toast the tortilla strips 'cause i figured they'd just get soggy anyway (so what's the point?) But since i was preheating the oven for something else i did it anyway. I'm glad i did, because the next day i just threw some torilla strips in with the left overs and they were a whole different kind of soggy! tortilla mush. Definately toast them first. :) I also added corn for a little more color, and a tad less garlic. I threw in some more spices toward the end for more flavor, to make up for slightly less jalapeno. (I didn't want to kill everyone with the ammount called for in this recipe!) It could have used more chicken for our tastes as well, but totally a keeper. Very easy to modify! The lime was excellent, i could have used more. I served this with cuban black beans best spanish rice, and ultimate frozen strawberry margaritas. What a hit!

Oven Pot Roast

this roast came out quite moist! i used white wine along with the cream of mushroom soup, and baked for 2 hours. i added baby red potatos, celery, and carrots for the seccond hour and they were perfect. Thanks!

Chicken Makhani (Indian Butter Chicken)

yum yum yum yum yum! My first attempt at making Indian food: A Success!! I'm not sure if i did everything according to the recipe, but i sure tried. Lets see... *I didn't see the point of using onion and shallot, so i just used onion. I'm on a budget :) *i ground up equal parts garlic cloves and ginger root to make a "paste" of sorts, i'm not sure it's what i was supposed to use but it lended just enough subtle flavor. And again, i'm on a budget! When would i use garlic ginger paste again? haha *i used heavy cream (whipping cream) instead of 1/2 n 1/2, because i had it left over and one user suggested it anyway. I don't mind the extra fat... yum. ;) *i could only find non-fat yogurt. Guess i made up for the cream. :) *blended a can of tomatoes for a tomato puree. It's what we had... *used frozen chicken breasts, but into chunks. I like white meat better than dark, and it's what we had. *i used crushed cashews instead of cornstarch as a thickener as one reviewer suggested, because it sounded YUMMY, let alone authentic. I served this with a blend of basmati rice, sautee'd onion, and sautee'd corn. It was heavenly :)

Corn and Rice Medley

yummy! I always make short grain sticky rice, but i needed a change for an indian dish. This was very tastey! I didn't use any mint, however, because that just didn't sound appealing to me AT ALL. I used frozen corn because we had in in the freezer. Yum!

This recipe has promise, but it's terrible as listed. It was far too salty and "clammy" (don't get me wrong, i LOVE clams, it's just that the entire dish tasted like clams.) I think i'll make this again but modify it severly! Like not adding olives (they were big time yuck!) and adding chicken broth or vegetable broth or white wine instead of half or the majority of the clam juice. I used tiger prawns instead of salad shrimp, and i'm glad i did. I also added scallops and maybe next time i'll add muscles or crab. Also, i wouldn't mix the pasta and the sauce. It just ends up rather childish.
