Baked Salmon Fillets Dijon
My favorite salmon recipe. The only change I've made is that instead of using melted butter I spray the bread crumbs with 'I can't believe it's not butter' as due to dietary restrictions I rarely if ever have real butter in the house. Would give it more than 5 stars for ease and taste!!

Slow-Cooker Pepper Steak
Very easy! Used almost an entire yellow onion, 1 green and 1 red pepper. Also opted to pass on the teaspoon salt due to concerns about saltiness from soy sauce. Sauteed sirloin in only 1 tblsp. vegetable oil, again due to my personal need to watch fats. I felt it needed 'something' but am not sure what. Perhaps instead of garlic powder next time will use chopped garlic. Overall an easy and filling meal!

Slow-Cooker Chicken Tortilla Soup
Delicious and easy! Subbed 14.5 ounce can fire roasted diced tomatoes for whole peeled mashed. Could not find 10 ounce bag or box frozen corn so used 12 ounce. As others suggested I put my chicken breast in raw and about 30 minutes before serving removed and shredded the chicken. The breasts were cooked perfectly and shredded like a dream. A great cold weather treat that will certainly stay in my rotation. Thanks Elena!
