Indian Tomato Chicken

WOWWEE~ could we please have more than 5 stars? Absolutely delicious and not too time consuming to make - just let it simmer and make the rice about half an hour before it's done. I made a batch of the spice mix so next time, I can just measure out spices and GO! Also next time, I'll put a few more thighs in the sauce for left-overs. (Each thigh is 3 points on W*W.)

Carrot Cake III

Super moist, tasty cake! Here's my trick for 'grating' all those carrots - peel and chop the carrots in chunks. Put a third of the carrots in the blender and cover with water about 2 inches above the carrots -- then blend until the carrots are finely chopped. Pour into a fine sieve and drain well. Repeat until all the carrots are done. Voila.

Microwave Lemon Curd

I suspended my skepticism and tried it. Super easy and better flavor than the kind from a jar--not to mention much less expensive. Easy to strain through a fine sieve to make it smooooooth. I stirred a little into mascarpone and spread it in a pie shell, then tossed about 3 tablespoons lemon curd with 2 cups of fresh blueberries to go on top. Woowee.

Awesome and Easy Creamy Corn Casserole

This is embarrassingly easy to make. I skip the butter and use low fat sour cream and it's still super moist and just tooooo good. I take it to potlucks and get recipe requests every single time. (you can definitely double it in a 9x13 and can make it 24 hours ahead.)

Todd's Famous Blueberry Pancakes

Yes! Great pancakes! I always double it so we can freeze some. And I always add more blueberries! You can use buttermilk instead of milk and/or add a dash of vanilla for more flavor, if you need it. Give the batter at least 30 minutes so the flour can absorb the liquid - the secret to fluffiness. If you use frozen blueberries, don't let them thaw. Fresh or frozen, good idea to drop them on the pancakes right after you pour them onto the griddle.
