This soup is fantastic and you can add anything you want. I made this two weeks in a row in the Crock Pot instead of on the stove. The first time I made it, the few changes I made were, of course, the cumin instead of oregano. That is a must. Second, I used all chicken broth, no water. (about 3 cans broth) I wanted more veggies so I added in a large, diced and sauteed zucchini. My boyfriend wanted me to make it the next week with EVEN MORE zucchini!!! It was a fantastic addition. I also sauteed my chicken breasts with the minced garlic, took the onion and blended it into a "sauce" and sauteed it with the chicken as well. Sometimes I add some green tamatillo salsa, some lime-juice, cayenne pepper... There are so many variations you can do. This recipe is awesome to make as is, or with whatever changes. You cannot go wrong.
