About this Cook
I've grown a lot since moving out on my own in 2004. It used to be a package of spaghetti noodles and a jar of sauce... now I make my own sauces. I am always up for a cooking challenge and will try anything once, if it sounds good!
My favorite things to cook
ANYTHING in the Crock Pot... I love short cuts.
My favorite family cooking traditions
Pumpkin Pie Goulash Enchiladas Banana Bread Meatloaf Biscuits Chocolate Chip Cookies
My cooking triumphs
Chicken Tortilla Soup Biscuits and Gravy Shepherd's Pie Chicken Florentine Parm BBQ Chicken Veggie Lasagna
My cooking tragedies
I've messed up variations of pretty much everything I've ever made in order to perfect it, or never make it again!

Bierock Casserole
I had to give you five stars Kathy! For one, cause you live in Salina (I'm in Wichita :) And second, because I've been making this for years, but with cabbage instead of sauerkraut. I'm not a fan of sauerkraut and the bierocks I remember from back home (Moundridge) always had cabbage. My friends and I are still making this casserole today. You cannot go wrong!! :)

Chicken Tortilla Soup I
This soup is fantastic and you can add anything you want. I made this two weeks in a row in the Crock Pot instead of on the stove. The first time I made it, the few changes I made were, of course, the cumin instead of oregano. That is a must. Second, I used all chicken broth, no water. (about 3 cans broth) I wanted more veggies so I added in a large, diced and sauteed zucchini. My boyfriend wanted me to make it the next week with EVEN MORE zucchini!!! It was a fantastic addition. I also sauteed my chicken breasts with the minced garlic, took the onion and blended it into a "sauce" and sauteed it with the chicken as well. Sometimes I add some green tamatillo salsa, some lime-juice, cayenne pepper... There are so many variations you can do. This recipe is awesome to make as is, or with whatever changes. You cannot go wrong.
