Grilled Sausages with Caramelized Onions and Apples

I wasn't sure how this would taste to be honest, it seemed so simple. But that's the beauty of it! It's simple and DELICIOUS! Made exactly as is, and it was perfect! Served it alongside some white rice. Will def make again and again! :)

Grandmother's Buttermilk Cornbread

My first attempt at cornbread and this was PERFECT! The same consistency as my mom's and grandma's but sweeter; although not TOO sweet. It was thick and SCRUMPTIOUS. Put butter on top and served it with some chili. My husband keeps asking me when I'm going to make it again! I melted the butter in the microwave using a pyrex measuring cup, added the sugar and egg to it and then poured it in a bowl and mixed the dry ingredients with it that way. Great recipe! Thanks! :)

Smokin' Scovilles Turkey Chili

My husband and I have had this 2 days in a row now (dinner and then lunch the next day) and it has been friggin AMAZING each time! I'm usually a weenie with spicy stuff but this was great! Not unbearable, but still left a tingle on my tongue. Used a green and a red bell pepper, and didn't have corn, but either way it was DEEEEELISH! My husband says I should use 2 habaneros next time, not sure I'm brave enough for that! LOL I felt weird putting the hot coco in, but honestly if I didnt know that I put it in there, I wouldn't have detected it. Served this in heaping bowls with shredded sharp cheddar and a dollop of sour cream on top along side cornbread. WILL MAKE AGAIN AND AGAIN! :)

Chicken Tikka Masala

This was sooooo delish! My husband and I LOVED it! We were surprised there was enough leftovers for us to have for lunch the next day, butI'm not complaining! I listened to the reviews and minimized the salt to 1 tsp for the sauce and 1 tsp for the chicken. I also omitted the cumin in the sauce and added 1 tsp of garam masala instead. I used a 15oz can of tomato sauce for more sauce. I also added some chopped onion for preference with the 2 jalapenos that I used. I didnt have skewers so I just poured the yogurt and chicken onto a brolier pan and lined the bottom with aluminum foil and baked it at 475 for about 10 minutes. It was perfect. Served with coconut & golden raisin basmati rice....let me reiterate: DEEEEEEEEELISSH! Next time we'll have naan instead. (:

Double Layer Pumpkin Cheesecake

I made this for a Christmas party pot luck and it was such a hit! I followed another viewer's changes for it to fit in a springform pan and it came out deliciously! My crust wasnt nearly as thick as I wanted to be, but next time I'll just use more graham crackers (besides no one seemed to notice it at all except me). I wanted a thicker layer of cheesecake so I used 3 packages of cream cheese. I also let it bake for an hour, then turned the heat off and cracked the door and let it sit in the oven for an hour. After it set over night, it was perfect for travel. I cannot express how much I (and everyone else at the party) LOVED this recipe. Anyone, even for myself, who's a novice baker, could make this. I'll definitely make this again (: Thank you!

Mediterranean Quinoa Salad

O....M....G!!!!! DINNER LAST NIGHT WAS AMAZING! My husband and I LOVED this. He's not big on trying new things, but when I told him about how healthy quinoa is and had a way to make it that he'd like, he went for it. I read over the reviews to see what adjustments we could make and with them it was delicious! We omitted the salt, used half the lemon juice and added chickpeas. I cooked the quinoa in vegetable broth, and used red instead of green pepper (that's all I had). I also am weird about raw onions, so when the chicken was almost done I threw in the onions so they could cook a little. We will definitely make this over and over again! Thanks a ton!!! (:
