Condensed Milk Chocolate Frosting
I used one square of chocolate and slightly over half a can (approx. 8 oz) of sweetened condensed milk, and mixed in about 1/4 cup of dark chocolate chips. No added sugar, no water, and I forgot the vanilla, though I intended to use it. The mixture stiffened up nicely while I was waiting for the cake to come out, and I didn't have to chill it. It wasn't at all runny, like other reviewers have complained (probably due to my substitutions) but it WAS utterly amazing, and I will probably never use traditional chocolate frosting again, if this is an option. It was SO SO SO good.

Chicken Chorizo on Quinoa with Peppers
I used a light spray of olive oil cooking spray instead of butter, and in place of olive oil, because I'm on a low fat diet. For the same reason, I used 2 small, lean boneless skinless chicken breasts, and no chorizo sausage. For the peppers, I used 2 large purple bell peppers from my garden, and 3 green cayenne chili peppers, also from my garden, and a dried ancho chili, seeded and cut into small pieces. I also added a small plum tomato and three yellow pear tomatoes to the pepper and onion mixture. Wonderful! Will definitely make again.

Lentil Soup with Lemon
I reduced the olive oil to 1 TB, for sauteing the onions and garlic (which I upped to 4 cloves because I love garlic and some other reviewers complained of blandness), because for health reasons I need to avoid fats and oils as much as possible. I omitted the final 4 tsp of olive oil added at the end entirely. And despite that, this was delicious! So anyone who needs to reduce their fat intake can feel safe reducing the oil called for in the recipe, without fear of ruining the recipe.
