Ginger-Lime Chicken with Coconut Rice

Todd's Famous Blueberry Pancakes

Wonderful! I made these for breakfast along with Scotch eggs and they were delicious! I also made a cherry blueberry syrup to use on the pancakes. In previous posts it was stated that you didnt have to let the batter sit for an hour. It doesnt really affect the taste of it. However, it may affect the texture of your pancakes. I would suggest letting it sit for the hour. They will be light and fluffy beyond belief!

Chef John's Crab Cakes

I made these for dinner tonight along with mango-pineapple cole slaw and homemade dijon tartar sauce. I could hear my husband in the other room exclaiming about how good it all was. He said he had never had crab cakes as good as these. Thanks Chef John! You are now on my favorites list!

Rob's Screaming Stuffed Jalapeno Peppers

Love these! I cut off the top of the jalapenos and core out all the seeds with a potato peeler. I also mixed in fresh grated parmasan cheese with some Worcestershire sauce and stuffed them with that. I also use metal skewers and an metal upside down cooling rack so they can hang up in the air and they arent sitting in their own grease.

Pepper-Honey Cedar Plank Salmon

Love this recipe! Ive made it twice so far. I doubled the sauce recipe tonight and used it on the chicken on the grill and it was very good. My vegetarian mother in law even ate some! Thanks for the delicious recipe!

Brandied Candied Sweet Potatoes

I went to the liquor store to get some brandy for this recipe and got bourbon on accident. Its ok though. These turned out very good! I dont usually eat sweet potatos but I enjoyed these. Thanks for the recipe!

Barlow's Blackened Catfish

This recipe is so easy and delicious! Ive never made blackened anything before so this was my first try. Alot of blackened catfish recipes involve tons of butter which is why i was passing them up. I made this in a cast iron pan so I could just stick it straight in the oven after the italian dressing. I dont eat fish but I ate this! Hubby loved it too! Thanks for the recipe! :) Sorry to say it was gone before i could take a picture of it.

Homemade Butter

I have unleashed the wrath of the butter gods upon my poor little blender! Alas, I put heavy cream into my blender and started it up. After awhile it started thickening up to the point of being unsweetened whipped cream. I kept blending til it went all liquid again, (the liquid got very warm from friction). Then kept blending.. about 45 mins in all. Occasionally i whispered words of encouragement to it and gave it a gentle brush of my fingers here and there but I was still unable to coax even a minute amount of butter out of it. Eventually I gave up and called it a loss. I gave it 3 stars anyways cause it worked for everyone else even though it didnt work for me and im sure it was something i did. The only Heavy Cream i could get ahold of was ultra-pasteurized. Not sure if thats the problem but im using it as an excuse anyways. :) Update: It was the use of my blender that was the problem. I got out my hand mixer and had butter in no time! Creamy, yellow, delicious butter! :)
