I love to cook healthy and simple.
My cooking triumphs
I was trying to roast some veggies in the oven and complaining about how it wasnt working well. So my husband goes to his work truck and brings in a propane tank and small flamethrower. He held the "firestick thingy" while i held the veggies up to the flame on either a skewer or a stainless steel pan for the best flame roasted veggies to use in the most awesome veggie lasagna EVER! Dont worry, the cats kept their distance!

Ginger-Lime Chicken with Coconut Rice
Both my husband and I enjoyed this chicken and rice immensely! It was a bit colorless so i added a side of steamed broccoli to it. Thanks!

Todd's Famous Blueberry Pancakes
Wonderful! I made these for breakfast along with Scotch eggs and they were delicious! I also made a cherry blueberry syrup to use on the pancakes. In previous posts it was stated that you didnt have to let the batter sit for an hour. It doesnt really affect the taste of it. However, it may affect the texture of your pancakes. I would suggest letting it sit for the hour. They will be light and fluffy beyond belief!
