Salisbury Steak with Mushrooms

I made this for the second time just a few days ago. The first time I made it as written except I baked them in the oven. Family loved them. This time, I made the gravy using flour instead of cornstarch. I liked that much better and the leftover gravy keeps a nice consistency for leftover warm ups. When I make this next time, I will experiment a bit and add extra seasonings to the meat such as parsley and garlic. This recipe is going to be part of the regular rotation in this house.

Cranberry Couscous Salad

yummy and great for pot lucks! I didn't have balsamic vinegar available. Researched the internet and came up with the following substitute: 1 T red wine vinegar + 1/2 tsp sugar mixed=1T Balsamic vinegar. Tasted fine to me!

Kelsandra's Pumpkin Cinnamon Rolls

Really liked this as an alternative to a traditional cinnamon roll. Used my Kitchen Aid mixer to make the dough, and needed to add a bit more flour to get the right texture. (this sometimes happens with any yeast dough recipe) Jazzed it up by adding chopped walnuts and dried cranberries to the filling. I let it rise a second time before baking and used a larger jelly roll pan. I made a simple confectioners sugar, vanilla, and milk drizzle icing instead of using the cream cheese frosting listed. Missed the cinnamon "taste" and will add that to filling in the next batch I make. I agree with some other reviews, a bit of salt might also be needed and will give that a try in the dough ingredients.

Pumpkin Coffee Ring

One of the best recipes I've made. Made the dough in my bread machine. After the first rise in the machine, I prepared it and placed it on a cookie sheet and let it rise again and bake. I used 1/2 tsp pumpkin pie spice instead of the individual spices and omitted raisins the first time around. I will be adding raisins or dried cranberries next time. The dough texture is very moist and tender.
