Whole Wheat, Oatmeal, and Banana Pancakes

I've made this a lot, and it's delicious. This last time I replaced 1/2 cup milk with 1/2 cup banana, and it was even better. I freeze my bananas when they get mushy, then defrost in the fridge for recipes like this, so I think mine are a little wetter and mushier, which makes for even better pancakes!

Grandma Snyder's Oatmeal Cake

Following other reviews, I only put 1/2 as much sugar. I think next time, I might cut the flour a little, since it was a little dry with 1 cup (total) less sugar. Still very good!

Lemon Garlic Tilapia

This was great, but I only cooked it for 15minutes. I think 30mins would have been way to long. I added some Old Bay & red pepper flake to suit our tastes better.

Cuban Beans and Rice

I added extra vegetables and used chicken stock instead of water and the kidney bean juices. I also added cumin, chili powder, cayenne and a touch of cinnamon. Delicious served with avocado, cilantro, and cheese!

Tomatillo Salsa Verde

I reduced the amount of water and pureed it with an immersion blender. I also like to add frozen corn kernels. I use this as green enchilada sauce for shrimp & crab enchiladas.

Shrimp and Crab Enchiladas

This is simple and delicious to make. The only change I made is to use imitation crab instead of canned crab. I use the recipe for Tomatillo Salsa Verde on this site instead of green enchilada sauce.

Healthy Banana Cookies

Delicious! I love healthy treats, and these definitely are healthy and tasty! I made some changes to suit my tastes. I used chopped raisins, craisin, and walnuts instead of dates, replaced the oil w/ 1/2 cup unsweetened applesauce, and added some extra vanilla and cinnamon.

So easy and delicious. It's great for dessert, and a way to use up apples that have been sitting around a little too long. I adjust the sugar based on the sweetness of the apples

Orange Banana Nut Bread

Banana Oat Bread Pudding

I love this recipe. The first time I made it as directed, without raisins and loved it. Yesterday I made it again, adding 1tbsp of cinnamon and 1/2tbsp vanilla. I used 3 apples, diced, instead of bananas and it came out tasting like apple pie. I'll be making this again and again with the leftover bread!

Polenta and Vegetable Casserole

This was delicious! I made my own seasoning mix instead of fajita seasoning. Also used yellow squash instead of eggplant since it's what I had. Nice and healthy, I will definitely make this again!

Moist & yummy! I will make this again for sure. Only change is that I added a little vanilla. May add a little cinnamon next time as well. The second time I made it I used wheat flour & added walnuts. Still delicious!

This was delicious! I used butter instead of shortning because that's what I had. The chocolate chips were frozen, so they stayed more together, less melty, which I really liked.
