Breadless Stuffing

I was a little nervous about how this would turn out but I loved the idea of preparing with less calories, carbs, etc. Everyone loved the twist on the traditional dressing/stuffing. This is a great recipe for vegetarians and those who follow a low-carb or South Beach way of life. Thanks! :D

Ginger's Shrimp and Grits

I served this for our champagne breakfast/brunch on Thanksgiving. It was a huge success! I excluded the diced tomatoes as I didn't have any on hand and I was NOT going back to the supermarket after doing all of the Thanksgiving shopping! My family loved this and has requested for this to be a part of our favorite meals. :) Thanks for sharing! ;)

Old Fashioned Mac and Cheese

Stuffed Cornish Hens

I would give this more than a 5 if I could!!! I haven't made Cornish game hens since making them with my Mom when I was a kid. I decided to try something different as my husband & I agreed we didn't want turkey or ham. I made 6 of these and added almonds. I also doubled the stuffing to make sure I had enough for all 6 hens. After stuffing well, I trussed the hens to make sure all the goodness stayed inside. ;) These were an instant hit with the family. We will be making this a part of our Thanksgiving tradition every year! Thanks for such an awesome recipe! :)

Taco Casserole

I'm tweaking this tonigh by using shredded chicken and chicken taco seasoning. I'm also using less sodium tortilla chips and an extra can of diced tomatoes while reserving the juice to add as needed. I also used seasoned diced tomatoes with garlic, basil & oregano. The other one was roasted garlic. I think they're both by Hunt's. I used whole wheat macaroni and did the whole box to use whatever was left over for another meal. For the cheese, I had Mexican shredded cheese on hand and it blended perfectly. Some of us tossed it with sour cream, salsa, Tapatio and green onions. This has become another family favorite! :D Healthy & delish! ;)

A Firefighter's Meatloaf

This dish was a winner in our house last night! My husband LOVES meatloaf and this delicious twist made him a very happy camper! My son, age 10, said, "Ooooh Mommy! This is YUM!" I can see why the Canadian Firefighters love this! I used ground turkey, added 1 extra-large egg, ground black pepper and my husband added a slice or 2 of the bread, unsoaked.

Oven-Roasted Asparagus

I made this last night to add with our grilled tilapia. It was great! My husband absolutely devoured it! My youngest didn't care for it as he preferred when I steam it better. My favorite part was the way the Parmesan cheese hardened and gooey. The asparagus was very crisp and tasty. We will surely serve this again! Thanks! :)

Best Green Bean Casserole

Another great dish served for Thanksgiving! I used 2 cans of French fried onions as I wanted to have enough to add more crunch on top once everything was done. My daughter loved it as her favorite and requested it more than once a year! Thanks for sharing! :)

Cheddar Baked Chicken

This recipe turned out well. I served it with brown rice and french-cut green beans. My fiance' enjoyed it overall. He said it was very moist and had a different flavor. However, there are a few things I'll tweak for the next time I make it. Instead of butter, I'll use a spray oil, such as Pam, on the pans. The butter didn't coat the pans as well as I would have liked and I had to keep adding oil so the chicken wouldn't stick. In addition, I would increase the oven temperature. I have a gas oven and normally have it set between 425-450* F and adjusting as needed. 350* F was way too slow and I had to increase just for dinner to be done in a timely manner. I would also add a bit more flavor. As well as more cheese. It was a little bland at first and you couldn't taste the cheese. Overall, this is a good recipe and we will have it again someday soon. :)

Fluffy French Toast

This is the best French Toast I've EVER made! They were absolutely delish! I tweaked the recipe a bit by adding a little more cinnamon as well as adding nutmeg and ginger. We also used sugar-free syrup. My fiance' loved them and said they were VERY good! I gave him a sample taste as I was preparing them and he said they didn't even need syrup. I asked him to describe them and he said they were light, tasty, good texture and perfectly browned. I asked if he would say they were fluffy and he said they were for sure. I told him that was great because that was what the recipe was called. lol This recipe is a new household favorite. :D

The Best Parmesan Chicken Bake

I can't wait to make this! :) For those of you who had problems with the croutons, try crushing them and sprinkling them on top. Or use Panko. Also, try adding this closer to finishing time. It should work wonders! Bon appetit! ;) *5 stars given due to my excitement level. I will adjust rating, if needed, after I prepare this dish. :)

Turkey Cabbage Rolls

I made this tonight. I haven't made these since my Mom showed me how to do them when I was a kid. I told my family it was an experiment night and it was welcomed very well by them! :) I had 3lbs. of ground turkey on hand, so I used what was left over from the above mixture to prep for a casserole in a few days. I may use Panko or Italian breadcrumbs and cheese. It will pair great with a nice salad. It's in the freezer and ready to go for the next meal! :) Thanks for sharing this recipe! :)

Tender Italian Baked Chicken

I made this a few weeks ago and my family absolutely loved it! I added some leftover spaghetti sauce once it was done and served over whole-wheat spaghetti noodles with a tossed salad on the side. The chicken was so moist and tender. My husband requested this again for tonight's dinner. Time to go do the prep work so everything will be perfect once again. :D Tip: Use ranch dressing to thin out the mayonnaise mixture as needed. Also, add Italian breadcrumbs to a large bag. Add a few pieces at a time and shake for a more even coating.
