Banana Pudding IV

Very good and hit the dessert spot. I had a squeeze bottle of simple syrup and once in place, I gave those cookies a healthy quirt before I put in the filling. That turned out to be a great idea, the cookies were sweet and softened, but not mushy. This concoction was well received by all.

Baked Spaghetti

I spiced it up a little to suite my families taste by sautéing onion and garlic with some dried italian seasoning with browned loose italian sausage. It was very well received and there were no leftovers. Next time I will let it rest, covered, closer to 30 min before serving, it will still be plenty warm and will hold it's shape better.

New Orleans Stuffed Artichokes

Very similar to my sicilian grandmother's recipe, which omits olives, onion and bell peppers. I would like to encourage everyone to INCLUDE the anchovy in the bread crumb mixture. Use your own proportions because a little goes a long way, but the anchovy adds a depth of flavor that makes this recipe great. If you, or your guests can taste "anchovy", you used too much! The little filets really do dissolve easily in the mix, but if that disturbs you you can always buy a tube of anchovy paste.

French Fried Potatoes

The sugar makes the difference, but if you really want to make the best fries, fry them in beef tallow. That's what made MacDonald's fries taste so special before they caved in to extremists in 1990. Lard is almost as good and readily available.

Eggs Benedict

Excellent! Used the chef's tip and made the Hollandaise in the blender. I have a terrible history of poaching eggs. My wife bought me silicone cups at the kitchen store that were made for this and they work as described. Picture perfect poached eggs.

Boston Baked Beans

Very traditional and great flavor! In New England, bean recipes are handed down for generations. You would be surprised to know just how old the baked bean recipes in those authentic Yankee kitchens are. This recipe is great just the way it is, but switched out bacon for small pieces of salt pork and added 1/2 cup of the good maple syrup. Thank you AJRHODES3 for sharing your family recipe!
