Easy Chickpea Curry

This was my first attempt at Indian. The first time I made this, I omitted the last four ingredients. It was such a hit in my house, I made it a second time, using all ingredients. The last four ingredients do add a bit more something to the dish, but it is great with or without them. Even my one year old loves it! It's our new standby Indian recipe in the house. *Tip: Farm & Fleet carries ground almonds on the cheap.*

Southern Comfort Sweet Potatoes

All I can say is, "YUM!" The second time I made it, I cut down the butter by 1 Tblsp and cut the Southern Comfort in 1/2 and it was better for my taste. If you love sweet potatoes, you have to try this!

Cappuccino Pie

Very quick and easy. My nephews love it, and I even tried a mochaccino version w/chocolate pudding instead of vanilla. It was great!

Chocolate Banana Bread

This bread is incredible. If you are thinking about cutting back the recipe, reconsider, since you will be kicking yourself later when you want more. I added a little more chocolate chips than what the recipe called for (I'm a chocoholic) and it was perfect. Even skeptical relatives loved it. Very moist.

Honey Mustard Dressing I

Very tangy! I huge hit at a group dinner. I used a little less soy sauce (not a big fan) -- pretty healthy, too! Definitely recommended for honey-mustard fans everywhere.

Black Bean Rice Burgers

Easy and very, very good. As a vegetarian, I'm very picky about my burgers. These rival the Veggie burgers from Ruby Tuesdays. Foodie boyfriend also loved them. It's a keeper!

Chili Potato Burritos

Yummy AND vegetarian! I used a smokey chili powder and it gave it a real good ol western Tex/Mex flavor. Don't have kids to rate it, but my boyfriend LOVES it!

Potato Chip Chicken

Great recipe for an amateur cook like myself...chicken turned out dry because I didn't tenderize it - OOPS! I used Fun Yuns as the potato chip and it turned out very tasty.

Easy Key Lime Pie I

I made this pie last night and it was a smash. I substituted sweetened condensed milk w/fat free and used Lite Cool Whip. I'm really picky about my sweets and especially about key lime pie, and I thought it was delicious. The recipe calls for 6-8 Tbsp of lime juice, - I used 8, and it was just enough, but I like my k.l. pie tart! Happy cooking!

Pork Chop Packs

Sweet from sweet potatoes and apples....excellent for late-night-at-the-baseball-game nights. Kids love it because they can help mom in the kitchen, teens can make it on their own rather than opting for junk/fast food.

Apple Bran Cheddar Muffins

I'm an amateur cook and this looked easier than it was. Definitely worth the effort if you like bran - YUM! Could probably use more cheese in recipe and I had to add a little water while mixing, but the cinnamon/br. sugar is wonderful!
