Super Short Ribs

'cest bon!! We doubled the pineapple & onions, and used "Rooster" chili PASTE (hotter/spicier!). Suggest cornstarch to thiken the juice/gravy. Served over extra wide egg noodles. This as also a wonderful recipe for PORK, CHICKEN, or CABRITO!

Indiana-Style Fried Cabbage

Delicious! We substituted RED bell pepper & 1 pkg FRESH mushrooms, then added 2 chopped jalapenos, 3 cloves minced garlic, & 2 tbls cider vinegar.

New Year's Day Black-Eyed Peas

Very Good, but needed "spicing up"; we used 2 cans Rotel (drained) & 1 tbls garlic salt instead of canned tomatoes & garlic powder. Plus 2 chopped jalapenos, & only 1 cup chopped ham.

Pineapple Chicken Tenders

GREAT recipe; u just need to add some lime juice, garlic, ginger, and sprinkle with black pepper when grilling. Also, grill some pineapple chunks/slices/spears to accompany the chicken. Works good on fish filets, too!

Easy & good. Leave out egg, and substitute seasoned bread-crumbs for flour. Garlic powder & Zatarains/Emiril's; spray w/lemon Pam & broil.

Margarita Chicken II

This sauce is the BEST! We added fresh cilantro (and extra Tequila!). Grill instead of broil, then pour sauce on. Great on steak or fish filets, too.

Garlic Shrimp Linguine

Great! To make this a complete meal & more colorful, we sauteed-in some asparagus tips, red bell-pepper strips, scallions + a little olive oil, lime juice, ginger & soy sauce. C'est bon!

Cousin Cosmo's Greek Chicken

C'EST BON!!! We added sliced black olives, capers, garlic, & artichoke heart/bottoms. Also, lightly saute coated chicken and then stuff with spinach/tomato/olives BEFORE folding & toothpicks. Mix water/bouillon/flour in advance.

Green Beans with Blue Cheese

This is absolutely WONDERFUL! The second time we made it, we substituted Feta for Bleu cheese (or some of each), sauteed the beans in olive oil/garlic rather than bacon grease, and used pecans instead of walnuts. Healthier, and just as good.
