Ricotta Cookies II

I made these cookies for Easter this year and I thought they were really yummy. Very subtle flavor but good texture. Liked the glaze a lot too. I hope you like the picture I took of them!

Melt-away Strawberry Shortcakes

I only made the shortcake and strawberries part of the recipe and used vanilla ice cream instead of whipped cream. Absolutely delicious and will be the only strawberry shortcake I make from now on. I used fat free half and half since that's all I had at home and it still worked fine. You could probably use milk as well to replace the cream in the bread.

Make Ahead Lunch Wraps

very delicious. I added half the amt of cheese to make it healthier. Be prepared--this recipe made me at LEAST 30 rolls, so have lots of tortillas on hand! Also, I live in Southern Florida, so I used the Vigo Yellow rice available down here. Not sure if this is avaiable throughout the U.S.

Quick and Easy Vegetable Curry

THIS WAS DELISH! I didn't have any tomato paste, so i just used a few teaspoons of butter instead (1 and a half, I believe) Also, I added about 2 tsps of powdered ginger as well. I absolutely loved this recipe and will make it again without a doubt.

Chicken, Cheese, and Biscuits

Nice basic "casserole" dish to make. However I changed this recipe quite a bit. First I am vegetarian, so I omit the chicken. Because the recipe calls for 3 cups of vegetables to begin with, and most people said that it's not enough, I usually use 5-6 cups of vegetables. I use everything from broccoli to mixed veggies to corn, basically whatever I've got in my freezer at the time. Also, I cook the biscuits while making the stove top portion, then when the stove top portion is done I dump that into a serving platter/baking tray and put the cooked biscuits right on top. Now it's ready to serve without needing to be baked in the oven.

Sun-dried Tomato Butter

Made this for the office Christmas party to spread on Italian Herb Bread. Everyone loved it, and some people even mixed it in with their mashed potatoes. I also used basil rather than parsley. Will definetly make again!

Eggplant Tomato Bake

Maybe I made this wrong but it was so dry and had a terrible flavor to it. I feel like the eggplant needs something else besides just tomato and cheese to make it taste better. Definetly won't make again.
