Vegan Apple Carrot Muffins

We made these and altered them just a bit. We added 4 tablespoons of whey powder for added protein and cut the oil in half and added a little more applesauce. We baked a few with walnuts. This is a delicious muffin and we'll save the recipe in our treasured recipe binder!

Turkey Wild Rice Soup II

I made this turkey soup last year and couldn't wait to make it again with this year's leftover Christmas turkey. We made a few changes last year and replicated the changes this year because it was so delicious! We didn't have celery, so, added the same amount of finely chopped broccoli and cauliflower. I also added Pot Herbs and Bouquet Garni. I picked the good turkey from the turkey leftovers and boiled the turkey carcass for a couple of hours and picked a little more. We also used brown rice instead of white. The best turkey soup ever without a doubt!!!

Maple Salmon

This is a delicious way to prepare salmon! I did use tamari instead of soy and sprinkled gamachio (sesame seed/seaweed mixture) into the marinade. We also drizzled the marinade over our fish as a table condiment. We'll do this again, on the grill, and perhaps on tuna or salmon steaks!

Iced Pumpkin Cookies

Have made and shared these cookies several times and always leave friends begging for more! This time, we did 1/3 whole wheat and 2/3 all purpose flower. We also used maple flavoring instead of vanilla for the frosting. We made 100 and gave away most! Now, time for another 100 just for us!

Amazing Whole Wheat Pizza Crust

Amazing whole wheat crust recipe! I have never made homemade pizza, but dying to try it. We used all organic ingredients and followed the recipe to a tee, using half of the recipe for the thinner crust. We topped it with grilled eggplant, roasted Roma tomatoes and red onion, and a sprinkling of parmesan and Italian seasoning. Delicious! The crust held together beautifully for a thin crust and was golden brown on the bottom. Nice light whole wheat taste. It's exciting to know we have another crust in the freezer! We can't wait to have a few friends over for pizza, wine, and movie night!
