About this Cook
My mother cooked every meal from scratch and grew many of her own vegetables when I was a child. I have fond memories of picking vegetables and fruits and then helping her can them. Sadly, my mother was gone from my life by the time I was 7 and my single father took us out to eat every night. As a young adult, I had to teach myself how to cook again. I emulate my mother and try to cook everything from scratch. In my home, food really is love and our single friends often drop by around dinner, knowing there is always an extra place at our table.
My favorite things to cook
Soups, stews, breakfast,comfort food, Mexican, and Asian. I'm happiest cooking for a crowds.

High Temperature Eye-of-Round Roast
So simple - I was stunned at how perfectly this roast came out. One of the few recipes I've used that I won't bother to tweak as it is so perfect as is. Thanks for sharing!

Best Tuna Casserole
I had nothing thawed and had to turn to the pantry tonight. My husband hates fish in all forms, so I thought I'd pull a fast one on him with this recipe. I added about 1/2 cup of milk, sauteed mushrooms and onions before adding to the mix, added a good shake of cayenne, added frozen mixed veggies instead of just peas, and used some nice, thick spaetzle in place of the egg noodles. It was so good my husband went back for thirds before he realized he was eating fish. Definitely a winner and a great pantry recipe.

Jim's Macaroni Salad
Very good recipe but, as other reviewers have noted, on the dry side. I made about 30% more dressing than called for and after a couple of hours in the fridge, it has soaked it all in. Next time, I'll make a double batch of the dressing and keep half on the side for the next day. Dressing is very good with some crushed garlic added in.
