Blueberry Pie

The first time I made this I followed the recipe and it came out incredibly runny and was not enjoyable. The second time I used 6 tbls cornstarch, 1 1/4 cup sugar, baked at 385 for 55 minutes and it came out perfect!! I also brushed egg wash on the top of the pie and sprinkled with sugar. I looked and tasted wonderful.

Broiled Grouper Parmesan

I made this with haddock...followed the recipe with the exception of baking the fish first rather than broiling it. The parmesan flavor is strong... we loved it!

Molly's Chicken

This recipe was good. It was way too salty...and I like salt. Next time I will use reduced sodium soy sauce. I did not find this recipe to be too sweet and I used a little extra brown sugar. Overall this was yummy and the chicken fell off the bone!

Almost No Fat Banana Bread

This banana bread was excellent but it needed some additions, which is why I only gave it 4 stars. I added a 1/4 tsp of salt, 1 tsp vanilla, and some chopped walnuts. I also used 1 cup white flour and 1/2 cup whole wheat flour. I used egg beaters instead of egg whites and swapped a 1/4 cup of reg sugar with brown sugar. This bread was very moist and sweet. I made 3 mini loaves. Will definately make again!

Spinach Quiche

This was my first attempt at making Quiche. It came out great! I changed the ingredients to lower the fat/calorie content. I used egg beaters, light margerine, skim milk, low fat feta, & 2% cheddar (reduced to 1 cup total as others suggested). The flavor was still excellent. I would like to find a reducted fat pie crust recipe for next time..if such a thing exists:-)

Low-Fat Blueberry Bran Muffins

These muffins were excellent! I love bran muffins and these are no exception. I added a few dashes of cinnamon and forget he vanilla...oops. They still came out so moist and tasty. I used frozen blueberries dusted in flour so they wouldn't run. I highly recommend these.

Crab Canapes

This is a great recipe! I tried it with both croissants and biscuits. I think it was better with the biscuits. They were the large flaky ones and were not that hard to seperate. The curry added great flavor and it wasn't overwhelming as I thought it might be.
