Best Carrot Cake Ever
This was the most delicious carrot cake recipe I've ever used. I took it to work and everyone was raving about it. The only thing I changed was I added a full can of crushed pineapple instead of just one cup. I found that it's very very important to drain the pineapple well as this makes the cake a bit lighter. This was delicious! As always, carrot cake is always tastier the next day so try to make this one day in advance.

Saltfish Buljol
This was a great recipe. I used green bell peppers and I didn't use any red pepper flakes. I cubed the avocado into the recipe instead of having it on the side. I also used a good quality extra virgin olive oil. I prefer my buljol chilled but I was so eager I ate it right away. When I had seconds a few hours later, it was even more flavorful. Enjoy!

Restaurant-Style Coleslaw I
This coleslaw is delicious. It's better if it's been left in the fridge for about two days. I just use shredded cabbage and grated carrots instead of the coleslaw mix and I use apple cider vinger instead of white wine vinegar. In addition, I use evaporated milk instead of butter milk. It still comes out perfectly every time. Everyone loves it!
