Shrimp Quesadillas

Loved it! Made on the fly, so used what I had on hand...yellow bell peppers, fresh shrooms, onion, garlic and shrimp. Served with avocado, plain Greek yogurt, chopped fresh organic kale and mango salsa. Oh, and a mango margarita! Took almost no time to make and was amazing! Will make again.

Country-Style Steak

Really good! My carnivores loved it! The only thing I changed was that I slightly decreased the amount of flour and I only used half the amount of olive oil that the recipe called for.

Boilermaker Tailgate Chili

Best chili ever! I did not have cayenne pepper. I substituted a can of green chili peppers for the fresh ones. I used 93% lean ground beef and 2 1/2 cups organic low sodium beef broth instead of the bouillon cubes. I did use the sausage but rinsed it with hot water to get rid of the fat before I put it in the chili. Great results! Will make this one again!

Salsafied Chicken and Rice

I loved this! I took the advice of the others and sprinkled taco seasoning on the chicken. I also cooked chopped onion and minced fresh garlic with the chicken. Next time, I will add black beans to the mix. Yummy and easy!

Roasted Okra

Linguine with Chicken and Sauteed Vegetables

Loved it! I used the veggies I had on hand: frozen cauliflower, frozen Italian green beans, fresh carrots and onion. I also used whole wheat angel hair pasta. Delicious!

Grilled Mongolian Pork Chops

Amazing! Best pork chops ever! I didn't have the ingredients to do the mustard sauce, but the marinade was great. I cooked them inside on a grill pan and used thick cut chops. A new family gave!

French Toast I

Tried this recipe yesterday morning for my family. I used Italian bread with sesame seeds and it was awesome! Family loved it. Saved in my recipe box. I didn't change a thing, except that I recalculated the number of servings. Served with fried apples and organic maple syrup. Yum!

Megan's Granola

Yum! My first attempt at making granola was a success. I tweeked some (did not have oat germ or wheat germ, and I mixed several kinds of dried fruits). I also used e.v. coconut oil. The only issue is that I wanted some "pieces" and you actually would have to eat this with a spoon or sprinkle it on yogurt or ice cream (which is NOT a bad thing!) Thanks for sharing this great recipe! I'm inspired to try more variations!
