Followed the pumpkin ginger recipe 100%, but with less than half of the crystallized ginger called for; I was nervous because I've never baked with it before. They were delicious without frosting, but I knew that a staple buttercream would do the trick and make them look great. Topped them with sliced crystallized ginger. This is an impressive holiday cupcake!
