Peanut Vegetable Curry Wraps

This was fantastic! As others have said, use 1/2 the amount of peanut butter. I prefer natural, unsweetened peanut butter. I also skipped the sour cream.

Beetroot Hummus

Who'd-a-thunk-it? Hot-pink hummus. The flavor of the beets with lemon juice, tahini and cumin is just a real adventure in deliciousness. It would have been easier if this recipe called for a certain number of cups of cooked beets. Not sure if I had more than a pound and that's what made mine watery the first time I made it? I found the texture better the second time when I left out the olive oil and decreased the beets slightly.

Roasted Beets 'n' Sweets

The coating for the sweet potatoes is the perfect blend of sweet, salty and peppery-ness. The density and sweetness of the potatoes really makes a nice contrast with the light juicy texture of the beets.

Mexican Bean Salad

There is way too much salt in this recipe; I cut it down to 1 teaspoon rather than a tablespoon. Also, the oil is unnecessary extra calories and can be reduced or omitted without disrupting the deliciousness. I loved this salad served over a bed of greens, such as shredded romaine or spinach.
