Zippy Shepherd's Pie

This recipe is FANTASTIC! My husband loved it and couldn't get enough! I had 2 helpings and usually don't eat a lot of ground beef. The spices are just right. Very flavorful! Simple and delicious! YUMMY! Will definitely be making this again and again.

Chicken Pot Pie IX

SCRUMPTIOUS!! Absolutely incredible pot pie! I made it tonight and had to rate this tonight it was THAT GOOD. Best pot pie I have ever had. My 2 year old loved it too. She was licking the gravy spoon before I could even pour it all into the pie. I boiled the veggies in chicken broth and made my own pie crust. I also brushed with egg white. I added thyme to the flour/milk base with the other seasonings. It was rich and creamy. It was wonderful. Definitely will make again and again!

Chili Seasoning Mix II

Really enjoyed this. Never made my own chili spice before and will use this from now on. It was a little 'hot' for our tastes.. with so much red pepper so i halved the red pepper and it still was almost too spicy .. so I will go even a little less on the pepper next time. Also did not add the flour. Thanks for a great recipe!

World's Best Peanut Butter Fudge

BEST FUDGE! I made this for the holidays and I had to keep making it again and again. Everyone kept asking for it. I definitely will be making this recipe for years to come. It was SOOOO CREAMY and SUPER EASY TO MAKE! I added more peanut butter than it called for because i wanted more peanuty taste. I added about 15 or 16 oz total. Also have EVERYTHING ready before you start. Pan greased, fluff, peanut butter and flour already out and measured. There is NO TIME once the hot mixture is ready. And make it all in a BIG pot not a 2 qt or anything small ilke that. It really puffs up and you need a big stock pot. Thank you!!

Spinach and Potato Frittata

I made this one morning when we were looking for something different than the traditional eggs and toast. It was wonderful! I didn't have any potatoes that day and it still was wonderful. I can't wait to make with potatoes next time as I'm sure it will be even better. Thanks for a great breakfast!

Day Before Mashed Potatoes

These were terrific! I needed them for dinner right then so I didn't refrigerate or bake. I just whipped them up and served them. I only added a little (less then 1/2 cup) sour cream because I was afraid since I wasn't refrigerating overnight that it might overpower them. We loved the onion flavor too! They turned out creamy and great. My husband loved them! And even my very picky 2 year old and my 10 month old loved them. Next time, I will try the recipe and make overnight just to see because it would be convenient to make ahead.. I just don't always know what I'm making the night before. Thanks!

Sour Cream Chocolate Chip Cake I

YUMMY! This was a perfect cake to make with my 2 1/2 year old daughter. It was easy since we didn't have to ice it. And it was WONDERFUL! I would even love it without the chocolate chips. It was very moist and yummy. I sprinkled the top with sugar and cinnamon. We couldn't stop at one piece. Our family ate the entire cake in 2 days. Oh boy.. definitely will be making this one again. Thanks!

American Lasagna

I found this to be just OK. Will not be making again though. It wasn't bad, I ate it but nothing that made me say 'Mmmm..' Still looking for that great lasagna recipe. My husband liked it this better than I did. But still it wasn't a favorite for either of us. I also had to add more sauce.

Slow Cooker Chicken and Noodles

This was OK to get started but not much flavor at all. Needed a lot of doctoring. I did some changing and it turned out wonderful. I used chicken broth instead of water and used more than 6 cups. I also added additional seasonings asuch as bay leaf, garlic powder, peppercorns, etc. and added vegetables such as carrots, celery. I added the pasta when we were going to eat in an hour so it just cooked for the last hour. And I thickened it up also.

Onion Rice

We LOVED this! I was looking for something to add to plain rice and my husband raved about this and my 3 year old daughter had 2 helpings! The only thing I added was some salt when I fluffed it. Thank you for a great recipe!

Morning Glory Muffins I

WONDERFUL! I was trying to find a morning muffin that was also healthy and not completly white flour. We all loved this one. I didn't add the chopped apple since I have a 19 month old and a 3 year old... I was worried that there would be too many noticeable things in the muffin with the carrots, apples and raisins and they wouldn't eat it. They ate it up so I may add apple next time. I'll definitely make again. Thanks for a great muffin!

Orange Chicken Stir Fry

I perfer my old standby stirfry compared to this. I even added other ingredients to this but still won't make again. I added red pepper flakes, fresh grated ginger, lots of stir fry veggies (mushrooms, bean sprouts, brocolli etc). If you want a really good orange stirfry recipe try "Crispy Orange Beef" subimitted by BEC. It is absolutely FANTASTIC.

Baked Garlic Parmesan Chicken

FANTASTIC! This was a great baked chicken. I changed some things to make it even more flavorful for us. For the breadcrumb mixture I substituted "pepperidge farm herb stuffing" instead of plain bread crumbs and also added 1 tsp oregano along with the basil. I used 4 large chicken breasts and used 4 tbsp olive oil and 2 cloves garlic. I also sprinkled a little salt and pepper on the chicken breasts before dipping them into the oil/garlic mixture. Oh to make this easier, use 2 pie pans for the dipping. It's so much easier than a bowl.. unless the chicken breasts are smaller or tenders. I did not think there was too much breadcrumb mixture as other reviewers said. I did have a little bit of each leftover (oil and breadcrumb), so I first drizzled what was left of the oil on the prepared chicken breasts in the pan, and then sprinkled what was left of the breadcrmb mixture over this. Then I sprinkled all of this with some garlic powder. It took about 40 minutes for the chicken to be done. It was SO MOIST and SO FLAVORFUL. Better and SO MUCH EASIER than my usual parmensan chicken recipe. WILL MAKE AGAIN AND AGAIN. Thanks!

Cranberry Waldorf

I made this tonight and it was absolutely wonderful with great texture and flavors. The cinammon makes it especially great. I didn't change a thing. My husband loved it too and we both had two huge helpings! It was also quick and easy to prepare. Thanks for a great recipe Thea!

Filet Mignon with Rich Balsamic Glaze

This was excellent but I made some changes to help it. First, I salt and peppered the steaks and then placed them in the pan in a little bit of olive oil (1-2 tbsps) and browned them on med-hi for 1 minute both sides. I put the 1/4 cup balsamic vinegar in a sauce pan and 1/4 cup sherry (just because i didn't have red wine on hand today) and added 2 cloves minced garlic and 1 heaping tbsp brown sugar. I let this simmer while the steaks were browing. Then I poured the sauce over the steaks and turned heat to low and covered. I cooked my husband's filet for 4 minutes each side to be medium, but I like my with less red and cooked my 6 minutes each side. The sauce reduced perfectly and it became a glaze and was wonderful. Make sure you don't let it reduce too much or it will be a burnt. I liked it with the sherry so much I don't know if i will bother trying with the red wine or not. It had a wonderful flavor. I would definitely only make with garlic added. PERFECT... we felt like we had just eaten in a steak restaurant!

Chicken and Cheese Stuffed Jumbo Shells

This was just ok. I don't mind a lot of prep work if it's a spectacular dish, but it literally takes 2 hours to make (and i have 2 children under 4 so 2 hours to preparing dinner is a stretch anyhow... but it sounded so good) Anyways, it was good, but nothing I would prepare again because the amount of work involved didn't give me a dinner that was worth spending that amount of time to fix. It seemed to lack something, and I had way too much filling for the amount of shells.
