Banana Crumb Muffins

These are delicious. I used half whole wheat, half spelt flour. For the oil I used safflower. I tossed in about a cup of walnuts and 1/3 cup of hemp hearts into the batter, with great results. For the sugar I used coconut sugar instead of the white. I doubled the rcecipe and it made 12 regular and a tray of minis.

Chocolate Chip Banana Muffins

Loved this recipe as a starting point. I used half spelt flour and half whole wheat, extra virgin coconut oil instead of vegetable oil, coconut palm sugar instead of white. I also used my vitamix blender to whip up the wet ingredients - no need to mash bananas and also blends the coconut oil easily. They came out of the oven beautiful, light and delicious. I iced them with chocolate icing for a special treat for a childs class party. Big hit.

Pumpkin French Toast Bake

My family (young kids and adults) loves this recipe. I've used a variety of breads, sprouted loaves and buns...whatever I have extra of. They all work great. I like this recipe because it uses a lot of pumpkin (I add half a cup too!) which adds a nutritional punch, and it isn't very sweet. Loads of flavor.
