Loved this recipe as a starting point. I used half spelt flour and half whole wheat, extra virgin coconut oil instead of vegetable oil, coconut palm sugar instead of white. I also used my vitamix blender to whip up the wet ingredients - no need to mash bananas and also blends the coconut oil easily. They came out of the oven beautiful, light and delicious. I iced them with chocolate icing for a special treat for a childs class party. Big hit.
