Chef John's Caramel Chicken

Yum! And quickly joining the ranks as a favorite stand-by dinner. Follow the recipe exactly, it's wonderful. This was the first time I used fish sauce. When I opened the bottle, and smelled it I was very hesitant, thinking I was about to destroy my food. But I buckled down, trusted Chef John, and it was totally worth it. Its a keeper. Btw-if you can't get the chicken to caramelize you may need a wider, shallower pan. Luck.

Chicken and Rice Casserole I

I love this recipe, and have made it several time. Here are some thing I found helpful. Chicken- Bone-in, Skin on. Season to taste and put on top of the rice mix to bake. Otherwise the chicken gets dry. Rice - If your not using instant rice the bake time is closer to 2 hours for the rice to bake all the way. Its well worth the wait. Cover & Bake -This dish needs to be covered and left to bake. If you uncover it to check on it to much it will not bake properly. I use the lid and then seal the lid to the pan with foil. And only check on it after its been cooking for an hour. Good luck.

Baked Ziti Supreme

Such a great, easy recipe -love it. It also works well with ground turkey, and or turkey sausage. I like it a little spicy so I add salt, pepper, red pepper to taste and use cheddar cheese. Mmmm Mmmm good.

Balsamic Bruschetta

Super Good! I put the chopped tomatoes in colander to let them drain for a bit first. It keep it from getting to juicy. ;)
