Original Irish Cream

Yum! I made this as a take-home gift for my holiday party. Ohhhh so good. I did split the almond extract into half and used coconut extract as the other half. I also split the heavy cream with 2% milk and used fat-free condensed milk. We loved it, I will definately make it again.

Sweet Potato Pie I

Paella

Ohhhh, this is soooo good! I am dieting, of course, so I replaced the sausages with turkey kilbasa, and used just a squirt of PAM to saute the chicken in. It was delicious. The only other adjustments I made were to add a half cup more broth and a 1/4 cup of chardonnay. (I made this at half size)

Wasabi and Shrimp Cheese Ball

When I made this the first time, I realized later that I had bought LOW fat cream cheese and not FAT FREE. It rolled great that time, but not in later attempts. I think the amount of soy sauce and the moisture on the shrimps makes a big difference. Just as a note, I nuked it at a potluck recently and kept it in a small warming dish. Talk about eating it with a spoon. LOTS o WASABI is a gooooood thing.

Sizzling Chicken Skewers

YUM! This recipe is delicious! My "marinade" was really thick so I added extra soy sauce and salsa just to thin it down. Otherwise...DEEEELiscious!

Pecan Crusted Chicken Salad

I used the pecan crusted portion of this recipe the other night, it was DELISH. I added an egg to the dressing, as I was skitish about the stick of the pecans, and all was well. Thanks for an easy and delicious suggestion.

Baked Asparagus with Balsamic Butter Sauce

Creamy Orange Chicken

I used this sauce recipe as a drizzle for Pecan Crusted Chicken. It was delish, but a little sweet. I added some fresh basil and blendered the whole thing. It was a hit at dinner. Thanks!

Chicken Piccata II

DELISH! I loved it. My friends loved it, we will be making it again. So simple, yet so fancy! I also doubled up on the sauce and added capers. I also added a smidge of cornstarch and water at the end to give the sauce some texture. I highly recommend this recipe!

Creamy Dill Cucumber Toasties

YUM!!! Can you say EASY, BEAUTIFUL and DELISH!!?? That would sum up these little diddies. I used Good Seasons Zesty Italian and let it whip in the mixer for several minutes while I was preparing other things. The flavors blended great. Thanks!!!!

Brown Sugar Cream Cheese Frosting

Very good. I think it would have been better if I had stuck to the recipe. I used it as a jumping point to frost a peach melba cake. I added too much liquid to it, but it was still delicious.
