Big Soft Ginger Cookies

Amazing cookies! The family and my husbands coworkers inhaled these within minutes. Only change-- I used butter instead of margarine.

Frijoles a la Charra

I love this recipe-- it reminds me of the soup served at one of my favorite childhood restaurants. I made some changes because of what I had on hand and the fact that I had already started a crockpot of beans with a can of rotel when I found this recipe. So I omitted the fresh tomatoes and I used some fresh frozen jalepenos I had instead of the canned. I left out the beer. The fresh cilantro is a MUST, it really makes this soup stand out. I also cooked these beans on low all day (about 8-10 hours) and they turned out fine. I will be making this again!

After-Thanksgiving Turkey Soup

Delicious! Very thick, rich and filling soup-- I can't decide whether it reminds me more of chicken pot pie or chicken and dumplings (both of my favorites). I used turkey stock that I made on my own and left out the chicken bouillon. Next time, I think I will leave out some, if not all, of the flour to make it a bit thinner. Oh and I had run out of celery, so I substituted celery seed.

Award Winning Soft Chocolate Chip Cookies

This is the best recipe I have found-- my previous chocolate chip cookie attempts don't hold a candle to this one. Yummy, chewy and loved by everyone who tried them. It's all in the pudding!

Healthy Coconut Oatmeal

My kids LOVE this recipe and it is the favorite of our usual oatmeal recipes. I used almond milk instead of soy, and the second time I made this, I cut it with water and it still turned out great. We also left out the walnuts because of allergies. It is great even without the yogurt and honey. Thank you!
