Amazing Whole Wheat Pizza Crust

This was the best whole wheat crust I've ever made! I read a lot of the other reviews and made a few changes from others' suggestions and one of my own: I used 100% whole wheat flour that I ground from whole soft white wheat, added 2 Tbs of gluten and 1 Tbs dough enhancer, added about 2 Tbs of italian seasoning and an extra tsp of salt. I made it in my bread machine on the dough setting and it rose beautifully in there. I rolled mozzarella cheese into the edge of the crust to make it stuffed-crust, topped it, and baked it on my preheated pizza stone. It turned out delicious! Though it was a little too salty with all the other toppings so next time I won't an extra tsp of salt. But great texture and flavor! Soft and chewy on the inside, crisp on the outside just like it claims.

Jay's Signature Pizza Crust

This crust was awesome! I really liked how light and fluffy it turns out. Great flavor and texture. I stuffed the crust with grated mozzarella which was a nice touch as well. I made this for a group of guys and it got devoured! Also, I let it rise in the fridge while I went out for the afternoon and when I got home it was perfectly risen, ready to punch down and roll out. This is my favorite crust recipe I've ever tried.
