Caramelized Baked Chicken

Reviewed: Apr. 10, 2003
All of the recipes I have found on this website have been 5-star (in my own opinion, and I also look for those who are rated as such). However, this recipe was okay, but nothing special. I used boneless skinless breasts, and the sauce mixture burned on the bottom of the pan just like another reviewer. The taste was fine, but nothing out of the ordinary although the chicken was dried out (and I basted it every 10 min). Didn't carmelize either. Would have turned out the same if I just cooked the chicken breast in my George Forman and drizzled sauce over it. Don't think I'll try this one again.

Au Gratin Potatoes

Reviewed: Apr. 3, 2003
Fantastic side dish! This made quite a bit, which was great because we had it for a couple of nights. I took the advice of others and added a bit more cheese, 2 cups. I also used bacon flavored cheddar cheese, which was terrific. This side dish is so versatile- we had it one night with slow cooked bbq chicken, once with scrambled eggs, and once with feta chicken breasts. That last one I got from this website as well and it goes wonderfully with the au gratin recipe! Thanks Jennifer!

Feta Chicken

Reviewed: Apr. 3, 2003
This was just awesome! I don't cook chicken in the oven very often, because I always seem to overcook it. But, already having a side dish, I needed something to go with it. I used boneless, skinless chicken breasts, only cooking two, for 20 min at 350. I used the tomato basil feta, but added some fresh chopped tomatoes as well. I took the advice of others- when it was almost done I drizzled melted margarine over the bread crumbs, added a little parmesan cheese, and browned it for a few minutes. I also used someone else's advice and marinated the chicken in white wine and garlic for a few hours prior to making. It came out perfect! My fiancee loved it as well. As my side dish I used another recipe found here, called Au Gratin Potatoes, but really it's a hashed brown casserole. Together the two were magnificent!

Chicken Noodle Casserole I

Reviewed: Feb. 21, 2003
This recipe was a little bland for my taste, but my husband loved it! Instead of poaching the chicken, I slow cooked chicken breasts all day. Then I removed the bones and skin, and chopped up the chicken (it was soo moist and nearly fell apart anyway). He raved about how tender it was. Made A LOT of servings- nearly 4 days for the two of us. It's a lot like tuna noodle casserole.

These cookies are excellent! I was looking for a butter cookie recipe, but decided to try these instead. So glad I did! Thanks!

Broccoli Casserole

Reviewed: Feb. 12, 2003
This recipe is awesome! Although, the second time around I used bread crumbs instead of crackers, and 1 egg is just plenty. Also I left out the lemon juice. Delicious! I make this every year for Thanksgiving and Christmas as a side item! Yummmmm! I often serve it w/ slow cooked corned beef, which compliments it very well.

Brown Sugar Meatloaf

Reviewed: Feb. 12, 2003
This recipe is awesome! I took the advice of another reviewer and put half the brown sugar on top and half on the bottom (along w/ the ketchup). Very, very good!
